How do you regulate temps in that thing when steam is hotter than boiling water?
Unless it's pressurized, it's not.
You're on the right track pasteurizing with a pot in a pot, bag in pot, jar in pot, etc. Bring the water to a boil while monitoring the temp in your substrate. When it reaches 120F or so, reduce the heat on the stove because the temp in your substrate will continue to rise. It's not hard to do-but takes a time or two to learn the heat transfer physics of whatever system you're using.
The bottom line is to keep your substrate at 140F for 90 minutes without letting it exceed 160F at any time. RR

Ozzy said: I regulate the heat with a meat thermometer, the blankets(to get it up to temp faster), and the gas nozzle on the stove.
the steam looses heat as it makes it's way to the core of the substrate. it can take a while to get to temps up fully loaded, but once the core hits one 140 I back the blankets off. the actual temperature of the tub I use never reaches past 160 due to the heat loss through the tub itself, unless I have it well insulated.(in which case it will get to 200 or more)
thats the practicalities behind it. Couldn't tell ya the physics of it though. It works wonders.
So now you are telling me that I shouldn't have given away the 3' dia stainless steel commercial crab steamer with the NPT fitting on the bottom that I had?

Thanks RR. I wish you would have offered that advice in your first post on this thread.
As long as I am on the right track, that's what I wanted to hear. Thanks.

yes it will be wet..but think about it ...it rains on the poo for years before you picked it up.it only leachs a little. field capacity is what you want.i like my 18 gal.sterilite works

I've posted it at least several hundred times already, so it's really tough typing it over and over and over again. The search engine here is your friend. It will save you a lot of grief.
That technique of pasteurization is also shown in the casing layer preparation video and repeated in the manure prep video. RR

I didn't see any actual pasteurization process in either video,I did watch them both for about the 25th time, twice this morning. Break up the jars and mix with already pasteurized substrate, skipping the part I was looking for which was the method used. You do a great job of teasing the viewer just enough to want to click on the BUY NOW button. I've almost done it many times. I blew my wad on start up equipment for now and can't spring for it ATM. You have excellent advertising skills BTW and the videos are indeed helpful,as short as the samples are.

You are correct sir. I was referring to "hotter" (although I used it in the wrong context) as being the heat energy the steam gains through the latent heat of evaporation it gains changing state from liquid to gas. Steam has more ability to heat something due to it's heat energy but won't raise the temperature (unless under pressure). I guess that's why it works so well.
Thanks again for the help and useful info.
