The perpetual fair-weather winter Chanterelle season rolls onward in northern California. The nice thing about this late stage of it, is that all the Chanterelle I walked right past the last few months are now too big to hide any longer. Its the perfect time for scouting new patches in foreign territory. I love it when you catch that flash of orange against the earth-tones... 
 
  
A few nice big ones this trip too. The first cluster of two is very hefty!
  
And whats to eat the next few days? You guessed it, more Chanterelle... Its about all I find this year, our other oak-loving winter mushroom types never made it back around since we had such a dry spell. I guess I should not complain. I'll take lack of variety over lack of mushrooms entirely. Maybe next week I'll find some velosa or something new popping up!

What do you do with your surplus of chants?
I tried drying them, but they reconstitute poorly imo.
I may have to resort to going the duxelles route

I do dry some of them, but only a small percentage. I also find they end up very leathery when reconstituted. Dried ones are still good for gravy and sauces though! (Letting them boil up in the liquid helps the consistency). But better yet, the dried ones are fantastic powdered and used in noodles or pizza dough. I make a stellar Chanterelle pizza crust by mixing dried mushroom powder with dough, rolling it out and baking as usual.
The majority of my excess ends up like this though:
 
A light saute with various means - onions/garlic, sometimes lemon, other times white wine, or perhaps chicken broth; and always with salt and butter. Then to the vacuum-sealer and freezer. I have eaten them this way nearly a year later and they tasted the same as the day I picked them. In fact, there are about 20 such bags dated and labeled by flavor in my freezer now.

You got it, by far the best way to preserve Chanterelles, saute and vacuum pack!
Good find! Around here I need to wait till the fall rolls around, but I'm still working on my vacuum packed stock!

Well thank you for that wonderful storage tip! Wish I had thought of that back when I had more Chanterelles than I knew what to do with...

This is the only way that I do it an have had them over a year an always say it tastes like the day I made it. I just date it an label by shrooms. I like the idea of labeling by flavor I will try to remember that. Oh yeah sweet finds an pics love to see that when its a looooong way away for me to pick em.

mmmm, looks awful tasty. I love the mushrump pics too. 
Also, do you happen to have a photo of the volva fully inctact on one of those Amanitas in the bottom left corner of the collection shot?

Not that very specimen, and it was ingested a couple days ago now... 
But here are some of the same species (constricta one of the western "Grisettes") picked from the same area on a different day. Notice the very distinctive fused lower portion of the volva. On some of them, it can be fused so deeply that the volva looks like it could be an annulus!

best way to prepare them is cut em up fresh and saute them in butter with onions... have some potatos on the side..... mmmmm mmmmmmmmmmmmmm
