And I couldn't be happier.

Sporeworks Blue oyster run

cold soaked for about 16 hrs.
simmered for allotted time, steam dried and loaded this morning.
The first 40 just came up to pressure and 80 jars to go after that.

This blue oyster certainly is not aggressive as aloha's strain(which I just got in from Evil, thanks bro :awethumb:

but it is what I have to expand, and I have seen some nice results from Buckeye oysters with this strain.

The timing couldn't be better as the grow room is now up to par, and the weather will be letting up right around the time these are ready to fruit.

Also the extra time  from the semi failure of the pinks has given me a little more time to get organized and get people interested in the idea.

I had no slots left for extra pasteurizers, so I upgraded my breaker boxes to have more space. That just got final inspection and is good to go. I can now run three pasteurizers if I so choose.:crazy2:

And because it seemed to interest a few of you, here are a couple of more screen shots of some of the setting up I have done.
The numbers on the materials are a little off cause we have found better deals on things, changed the substrate and so on, and there are yet some things that I will organize better, but you'll get the idea.

Thanks for the support everyone, I think this grow will turn out to be something special in my list of pivital moments in life for the next few years hopefully.

How in the hell did I miss what was going on here!!!
This going to be an kick-ass thread with all the info posted!!! You need a 6 burner stove to do all that grain at once.

So you have the fruiting chamber all tweaked and ready to go? So what do you have in your chamber right now? I can't wait to see all those straw log with mushrooms going out of them!!!
Thanks for posting Ozzy's got the Blues!

Welcome aboard Pepper.

Yup the grow room is working nice, nothing in it yet though for prolly 2 more weeks. The next run is going to be on cottonseed hulls,(not sure if I will be supplementing yet)

I am debating picking up another stove and a couple more pc's. I think space wise it would still be eaiser/cheaper than investing in a RR style steam setup at this point. It isn't on the top of my list yet.

when the electrical inspector came in he looked at the breaker box and was like "pasteurzer? whats that? what is it used for? when I told him he didn't look to happy, but I explained it to him and offered to let him go through the house for evidence of anything illegal, and eventualy he dropped it. Even took somewhat of an intrest in the process. I hate inspectors!! Always mucking things up in the first place around my neck of the woods and generally wasting everyones time with no shows and what not.

The stove I picked up for 100 bucks at a resale shop + 320 for 4 more pc's  + 30 for gas pipe. so 470 to save a few more hours. 80 at once would be nice.

The first round with the Pinks running 4 pc's at once was pretty good. I did come back to them on one run and 2 of the pc's were only at 12 psi, and sure enough those jars contaminated.

This round I waited 10 more minutes to make sure that they were staying up to par and everything went smoothly.

Wasnt' to bad though, I ran 120 jars yesterday, so the final rinse, simmer, dry, load changed a bunch of filters, cleaned the workspace, cut up replacement foil lids for some.... in about 5 hours without breaking stride. pc'ed the last 40 this morning and inoculated the first 80 from yesterday.

I  need to switch to bags, but I really F#*ked em up the last time I tried. I keep feeling like there is alot riding on getting this going good soon, and can't convince myself to pull the trigger on trying them again at this point. It just feels like the timing/spawn supply is never right to take the risk.:frown:

As you are looking at a commercial operation, have you considered just buying your spawn in? Add up those hours, expense and space and it might make sense. Shipping cost plays a big part but for example in Europe I can buy high grade commercial grain spawn for less than 1$/Quart.

I have not considered it. I think the scale that you are looking to do is much larger than what I am shooting for out of the gate.

and while it's a pain in the ass at the moment to run/wash/prep all these jars, it still beats (at this scale) paying the extra cost for bags and additionally spawn.

I don't mind cranking up the tunes and putting in the hard work it takes to manage all of this. It is what makes me better at the  process of getting bigger. Kindalike paying dues. When I am absolutely fed up with washing jars,I will switch to bags, another hurdle, but once I do it, nobody can take that knowledge and experience away from me.
I Would be cheated out of the experience if I just bought premade bags.

If I were running a 1000 pounds a week , I would consider it, but as it stands I am working on getting it to 140lbs a week, which is easily manageable by just me.
For 1600 dollars in estimated product, I have the process down to somewhere around 30 hours of actual hands on work. Once I have everything I want in place, I am shooting to get it done in 20.

That not too bad of a turnaround for a small investment of time and a few hundred dollars a week.

2 people
160 bucks for materials
1600-160=1540
1540/2= 770 apiece
take out delivery/electricity/insurance/a phone line for the biz/
puts it in the 600 dollar a week category per person
at 30 hours of time investment, you are getting paid 20 dollars an hour.
at 20 hours it is 30 bucks an hour.

then add that the buisness has to pay me back for the setup.

I figure when it's all said and done, phase 1 will have cost me 3700 bucks to setup(I am at 2500 now)
So once it gets rolling, 100 from me and 100 from my partner a week  will pay back the the biz.
(which will bring us down to 500 a week pay wise)
It will have paid for itself in around 19 weeks.

Sooooo..... for the first 4 months, it will be rough, but manageable.

ATM these are guestimates as I have not hit that mark yet, but you get the idea.

I am alright with an extra paycheck for weekend work.:awethumb:

The goal from the get go on this was not to make it rich, but to build up a biz that pays for itself, makes me better at mycology(more to work with/experiment)  and gives me a little cash to have some fun with.

If I am able to get above that mark, then it's just a bonus with the choice to move ahead with this.

Wow you really got everything figured out.

I'm loving the spread sheets with hours/expenses I will really need to do the exact same thing when I get the ball rolling on my project.

Unfortunately I hardly have room in my current house, my spare room is being taken up with bales of straw, other supplies, my 75x, shelving unit, and table to do work on.

Today I will be going to get another shelving unit sine my current one is full of spawn bags of king oyster now.

I will be moving in April to a place with more space so I will have a room dedicated to growing.

I've had great luck with samsclub, I figured I would recommend this stuff since it has helped me greatly:

This shelving unit holds 72 large spawn bags (12 per shelf), I think it would work great for holding straw longs horizontally too:

If you have a 75X this rolling cart works great for it and can hold 500lbs and even has storage underneath for jars/supplies:

Also this stainless steel table is pretty cheap and is at a nice high level to stand and work on:

I plan to get another one when I get the money for a 4' 2' flowhood since it will fit perfect on it since it's 49".

One of these days when I have something to show I will make a thread, currently all I got is a messy room with straw everywhere, half colonized king oyster bags, no fruits to show and an angry girlfriend for me spending all this money on my new hobby

Thanks Doc, I am trying use this thread as a research tool for others who want to give this a shot on the small scale. When I went decided on my pinks run to make a go at this, there were some good threads about the process, but no numbers on what it actually takes.
I will be updating my spreadsheets soon towards that goal, but it's pretty busy with the run, and it's my birthday weekend as well, so I have dinner plans with family as well as a small rave being thrown for me by some friends...so Im gonna be wreaked for a few days..lol

Also If anyone wants to add their angles on profiting from mycology, I would not be opposed to you throwing up in the mix and discussing the pros and cons of it.

here's one I thought of yesterday while making jars.

It sucks prepping jars.....
why not run an ad in the paper, for teaching people how to grow mushrooms, they come clean rye, wash jars, inoculate and what not.
they get to take home a few pounds of spawn and sub for the effort
I get cash to pay for materials doing what I would be doing on that day anyway, and have my work load reduced.

thoughts?..........

I love to prep jars, but I hate bulk spawning.
I'd make jars for you by the case- you give me empties, I give you full ones.

I like the shelf mycoman, the small cart would not roll well on my basement floor.
My ol' lady(11 years:thumbup:) hasn't said much about the biz.

I tend to make somthing successful and then move on to a new challenge in life, she saw it with the bar,  and a couple of other "endevors" I have been involved with.So she trusts that I will either do it or find something else that pays for the extra's in life. Funny though, she goes apeshit if I drink her last pepsi

suicidal tendencies a must listen
Evil!..I know your gonna see this link,  I think you'll love it, go to isohunt and rip the "primal cuts" album by them

on my wants list.....

I used  to have one that I got when we closed the bar down, but the motor fried on it. Would make washing a few hundred jars a breeze

Ha! That's funny I just finished the write up in my journal about working out the numbers - in the example I used coincidentaly it came to 142lbs /week! (see sig)

Just one thing though in your workings you talked about $1600/4 weeks,If I am not mistaken the life cycle (grain to cash) is about 10-12 weeks so wouldnt your one batch yield $160/week?

... But have to say that is an awesome spawn producing set up!

the 140 lbs per week is the spawn lbs. number, I am gonna shoot for 160 lbs in product.
between 8-10 dollars a lb.

Lets say it's 4 servings per pound. So a 10 lb minimum order from a resturaunt would serve 40 people.

So I want to find a resturaunt big enough to handle at least that to expect not to have to make deliveries every day.

I am pitching the idea that they use my product on a in a special of the house plate once a week. Many of the cooks I have talked to said If I can deliver nice looking quaility mushrooms that I am thinking to small with this idea and that they would be looking for more than 10lbs a week.

That being said, 10lbs wouldn't be a big hit for them, and that it all comes down to me showing up with mushrooms in hand to make the deal happen.:awedance:.

So at that rate with one  night, they spend 10lbs @ $10.00= $100 and get at least double that back in profits from their servings. That's my take on it from talking with a few resturant managers.

It's 1600 per batch per week, so it's not divided by 4. But I see where you are going with that. I am not including the pilot runs/ramp up into those numbers into that scenario, my numbers are based on having everything set up turning over weekly. so the monthly income for the biz would be 6400 .And yeah it will take about that long to get the weekly cycle into place. But once there it should be smooth sailing with the system down.

If that doesn't sound right with your numbers in your scenario, I would love to hear your take on it. I'm gonna chek your journal when I'm done typing.

Right now I am starting with a biweekly cycle and will be ramping up once I get it to work well.

You sir, do not mess around. 120 jars of spawn?! Looks like you will be swimming in oysters pretty soon. This strain is super killer too, I haven't had anything but good luck with it over the last 4 years.

Thanks PitcherCrab, your grows as well as a few others have been inspirational for me to move from cubes to gourmets.:awethumb:

It is a pleasure to have you in my thread with the support.

I am glad to hear that you have had good success with this strain as well!

I just transferred the blue oysters Evil sent me into their master jars today as well,So those should be ready to put into production as this run finishes up.

I also got the chance to load a hen of the woods(also from Evil) into a jar and will prolly make 6 more jars when that is ready, to have as an experiment and a taste test. I'll start a seperate thread when that is ready.

And as if that were not enough to handle I also have 20 jars of lions mane to make  a few test blocks with.
swimming in shrooms/ more like drowning..:lmafo:

Definitely the most rewarding mouseclick of the day. I'll be following this closely.

I'm ramping up to my First Grow Ever... your operation makes my mind do cartwheels over the possibilities!

On a The-Universe-Works-In-Awesome-Ways sidenote:
Before I came on the Shroomery today, I doodled out my fantastically, optimistically naive Future Pilot Op plans (in lieu of doing my soulsucking job). So this thread is most enlightening and timely.

Keep the updates coming!

SHITAKE SIDE PROJECT

So I had no filter patch bags, but a bunch of shitake on agar. I decided to throw them in some jars and let them do their thing.

I'm not expecting much from them, but I had all the extras to throw it all together and figured wtf, some delicious sides on some spring grilling.

I opened one last week , forgot about it and went to check on things today and this is what I found.

It has a good amount of pins, as well as some other jars that are ready to go.:awethumb:

Back to the Blues...

Jars have been kept in the basement, so not ideal colonizing temps, but they are almost finished.
People have started calling for my other biz, so it is actually good that these have been slowed down a bit. Gives me a chance to go out and earn some mula.

Prolly like 4 more days on these and then it's time to fire up the pasteurizers.

Finished up Pasteurizing this weekend.  I have  more to make, but I am spreading it out over a couple of days  so that When they are done I will have a chance to deliver the samples to my potential customers in a not so break neck fashion.

15 logs
straight cottonseed, no supplements
5 jars of grain per log

The ones I made on Thursday are grooving.....

I will say that the experience of working with  cottonseed hulls was much more pleasant than using straw.

Storage was easier/cleaner

Not having to presoak was a huge time and space saver.

The draining and cooling was substantially longer than straw. Probably double the time it took for straw to do the same.

I found it easier to keep the grains off the side of the bags due to the consistency of the hulls, that was a huge problem when I tried with straw.

Also found it much easier to compress the logs after loading, and keep air pockets inside the bag to a minimum.

Me either my friend. :ahahaha:

One way or the other. Temps are going to be ideal outside when these are ready, so if they don't enjoy the new room when the time comes I'll make up a shelter for them outside and fruit out there.

There will be oyster for dinner soon I swear it!!!!!!!!!!!!!!!!!:grrr:

Stately! How much do you pay per pound for your cottonseed hulls? Or a better question - how much do you pay for your bag of cottonseed hulls?

A 40 pound bag was 8.00 bucks, so 2.50 more expensive than what I was getting straw for.

Not bad considering it takes no mechanical effort to prepare it. It sounds like it's more easily manageable than straw. If I can find a 40 pound bag for 8 bucks in the area (and I do have a ton of feed stores nearby) this means it will cost double what straw costs...but it is still dirt cheap

Awesome guys! I  can't wait to see your results!

So I have been CRAZY busy for the past two weeks and have not checked on the Blues in two days.

Those two days it seems were very important.:homerdoh3:
A few of them have started to pin, no color and just blobs.:grrr:
Luckily it just 2 or 3, the rest look like they are ready to go, so I turned on the lights, hung them and fired up the ultrasonic.

Should be smooth sailing for the rest of them. I will have daily updates from here on out to follow the progress.

Here are the pics so far...

and my shitake jar project...

I also got my tyvek sleeves in and my large spawn bags so my lions mane and shitake projects can start moving in the right direction.

Night time pics!!!

So I'm hoping for some insight as to how these are looking for the end of day 2 in fruiting.

Can any one tell at this point  if they need any adjustments.

The humidity is at 95% and the air is completely changed about 5 times an hour in the room.

I have it timed so that it gets super foggy, then all of the fog is exhausted out, as soon as it is clear in the room the fogger goes back on.

Should I try fluctuating the humidity as RR says he does? so back the fogger off for  about 15 min. to get it down to say 75% humidity and then shoot it  back up?

The basement doors are all open as buckeye suggested.

I will be extending the intake on my filter tomorrow so that it can sit in front of an open window in the hopes it can improve upon what I have going.

For some reason it bothers me only taking the  stale air from the basement and injecting it in for FAE, or am I just being anal, and it doesn't matter as long as the grow rooms air is exchanged?

They are choking; get them air a bit more regularly.

This is where I ran into problems.  I couldn't keep the humidity up while also providing FAE while indoors; going to give it another go with a huge basement and set up my conditions ahead of time.

Still, it's kinda hard to tell what's perfect for them until they get in there and start growing to let you know.

Will do! I thought that may be the case, but as this is my first round I was unsure.
I can cut a window out of the plastic, there is a window behind it with a vent. I can open it and draw fresh air in right from there with a small fan constantly on I thinkthat might improve conditions slightly..

Thanks for the advice humility and fernando!

Doing this in stages has worked out well to get this room dialed in.

It is already 100% better than my pink oyster run.
the bags coming up behind will be better off for it.

Either way the past few days have been exciting.

Do you mind dropping some insight as to how you came to the conclusion that they need more fae so I might know in the future what to look for?
Is it the length of the stems?
Or the size of the caps?

"to get it down to say 75% humidity and then shoot it  back up?"

Getting the humidity up to saturation is good for getting a nice pin set. Once that's achieved you can back the humidity off and increase air. Mold and midlew favor high humidity and dislike air circulation too.

What humidity range would you say works for you fungus?
I am guessing that maybe I should be around 80-85% but that is just a guess at this point.

Both; it's something you wouldn't know unless you've seen lots of pictures of what blues (or any pleurotus spp.) looks like under various conditions.

Oysters should almost look like polypores; you should at least have to crane your neck and look underneath of them to see pretty much any stem at all.

Looking down on them you shouldn't see any stem, just a big fat juicy cap about the size of a woman's palm when small or a large man's palm if especially large.

IN OTHER FUCKING NEWS:

DUDE your setup with 4 PCs on the stove at once has me more excited than a motherfucker.  I'm gonna spend this entire spring trying to find PCs that are being sold via craigslist and snatch up 3 more of them son bitches.

That'd definitely alter the amount of rye I could sterilize per day.  Muhahahahahahah!!!!

Awesome guys! I am very appreciative of the advice and will be making the necessary adjustments to the room in the morning. there are 8 more logs in there just starting to pin so we will be able to tell if the adjustments are working.

Well I harvested the first log this morning! 3lbs of product, yum.
I am making the adjustments to the room here after the post, hopefully it will be enough to correct the Fae problem. Enjoy the pics!!!

Thanks Evil, It sure does feel good. Hopefully the corrections I made to the room this morning will make them even better, but for now I will be making a special dinner for me and some friends! I'll post the recipe that I decide to use later tonight.

Thanks prof and fungus!

A new question has arisen this morning.

I just went and checked on them this morning and encountered some discoloration on a couple of the pins.

Anyone have any ideas about what this might be?

Soooooo....omfg... My partner came over tonight and is somewhat of a cook. He whipped up  some risotto with blue oyster mushroom cream.. :homerdrool:

He cooked the mushrooms in bacon fat, butter, and heavy cream and some white wine..

Here are some pics of the festivities..

Oh and I know my stove needs to be cleaned sorry to gross you all out, but cleaning hasn't been a priority this
week....:ahahaha:

The grow room is now having the 90 cfm run all the time for fae and the window has been opened. The humidity is now holding steady at 78%

I forgot to take pics before we picked some, but the stems have shortened up, the caps are meatier and larger.
They look better.

Thanks everyone for steering me in the right direction.
:awethumb:

p.s. still curious as to the discoloration on some of the pins upthread.

I think that I just found what the problem is.

It is called Fungal Brown blotch disease
found in the mushroom growers handbook chapter 8

pretty easy to correct apparently. It is from the room parameters changing abruptly.

For my first risotto ever it turned out pretty good.  Having super fresh Blue Oysters to cook with was AWESOME!!!
Here is the link to the recipe if anyone is interested.

And Ozzy needs to invest more time to learn how to to cook with spices more than he needs to clean his stove!!!!

The humidity is at 78%...

the 90cfm fan is running 24/7....instead of having it go on when the ultrasonic went on which is how it was set up before.

the ultrasonic goes on for 12 min and  off for 7 min

I am using a hydrofarm brand atm. I had it on hand from other projects. It seems to do the trick , but if you had an especially large run of hose, I don't think I would use it. there are definitely better fans out there. This one was relatively cheap at the time which is why I picked it up.

And Thanks Fernando!

Thanks guys!!

first round is just about finished up..we are at 53 pounds and still have an 18in diameter log yet to fruit(all of rest of these were 12in.) . I am hoping to hit 65 pounds when it is all said and done. If we can get there, than doubling the product should be easy as I have just enough space to squeeze it all in the room..

I'd like to take a minute and thank Buckeye Oysters for his threads and some advice via pm. His advice as well as some others were of great help before I even jumped in to all of this. Thanks Buckeye!!!

the yield? 65 pounds, or are you talking BE?
I'd have to look on how to calculate that as I don't know off hand. I know it's around on the boards But if someone want to chime in again on how it's calculated , I'll run the numbers.

The first harvested logs have started to pin again!! I haven't had time to dunk them so I'm gonna try to do that today.

We have sold a few but this round was more about samples and networking.
I did some cold calls previously to generate interest and info.
Yesterday I hit up the people I know personally and it turns out they will be an even bigger help to get things rolling. The chef that I know that is a professor told me of a chef association that he is in and they hold dinners once a month with food donated by local growers...a great way to market.

Also he gave me the numbers of some of his associates for me to direct sell to them, with no problems as to dropping his name for the endorsement.:awedance:

I have also got an avenue to donate my used substrates to community gardens in the area.
I have a close relative that actually runs one...easy way to give back to the community and get some brownie points on our business rep.

As a last note I hit up some old friends in the bar biz on the east side of town(trendy) and one of them Had just gotten a new head chef that I was able to talk to.

It turns out that he used to be the buyer for one of the biggest names in the restaurant biz in my neck of the woods.. I took him out back for a  :bigblunt: :awethumb: and he said he was more than happy to put in the good word and would even go with me to meet with said restraint to make the sample delivery and lend some credit to the cause!!!

There are a couple of more incredible stories like this , but I don't have the time to type it all.

Needless to say we have a few buyers for the second flush and so far all response have been great. Things are rolling along great!!!!.

I need to change from a bi weekly to weekly right away in order to stay on top of it.

I attempted grain bags again  and this time I think I have it down. Everything so far has turned out to look correct, no extra moisture in bags and the prestos pulled a vacuum this time. my days with washing  hundreds of jars are numbered...  :omgawesome:

Also have seen no sign of contamination yet in the room!
Which is great, as the first round with pinks was a disaster before the first round was even finished.

Sounds like the sales are on the way! Nothing beats meeting the chef, I got great results doing that, and zero results dropping off flyers/price lists.

Yield is mushroom weight/substrate weight in %, I find it is more relevant for commercial growing than BE.  In other words if a 20lb log gives 5lbs of mushrooms in it's production life that's 25% yield.

Ahh I see. well a 40 pound bag made 5 2.5' long and 12" lay flat. logs..

so..the logs have 8lbs of unsupplemented cottonseed hulls each bag, and on the first flush we are averaging 4lbs of product...
so so far...50%...the second flush on one of the logs should be done in about 3 days so that number should go up.

Nice yield, I'll have to keep that in mind when I make my logs.

Yours were mainly 12" right?

Mine will only be 6.3" wide (I think that is correct for 10" wide polytubing) but I will be using straw and 20% alfalfa.

I think I will give cotton seed hulls a try if my feed store can get them, it would be interesting to see they difference in yield.

yup, 12 in lay flat poly

The dunk...I need to go buy a grill I can put some weights on to keep them submerged..but this did the trick for now..maybe the top 8 inches didn't get submerged. soaked 5 at a time for an hour each load..
