I'm attempting pig's feet (trotters) tonight.

I'm using this recipe, starting it in about 20 minutes.
Spicy Souse Meat
Ingredients:
3 pounds pigs feet (long ones work best) 1 large onion (chopped) 1 12 oz. bottle of beer 1.5 cups white vinegar 3 garlic cloves (crushed) 1 cup of hot sauce 2 teaspoons salt 3 teaspoons onion powder 1/2 teaspoon of crushed red pepper flakes 1 teaspoons black pepper 1 bay leaf
Instructions:
Add pigs feet in large pot with 1 cup of vinegar, beer, garlic, onion, 1/2 cup of hot sauce, 2 tsps of onion powder, salt and pepper. Boil until tender and liquid has reduced (about 3.5 hours). Let cool. De-bone Pigs Feet and chop into small pieces. Mix in 1/2 cup of cooking liquid, crushed red pepper, remaining hot sauce vinegar and seasonings. Adjust any seasoning to your taste at this point. Place in a loaf pan and cover with saran wrap. Let chill for at least 3 hours.

I fucking love pig's trotter. Interesting recipe as well.
It's amazing when it's braised like that. Super tender and fatty and delicious.

Wow. Raw, they smell like feet and farm. I didn't measure anything out, just winged it as I usually do, adding what feels like a good amount of this or that. It smells great though while all blended. Kind of like a beery, fruity, ethnic spice... hard to explain. I used Dogfish Head 60 min IPA for the beer. Let's see how this goes!

Man this sure is stinky, but in a good way. It smells very sweet/sour, and slightly porky. When I walk into the kitchen I get this sweet aroma, but when I open the pot and take a whiff it burns my nose. A few more hours and it should be gnawin' time.

toast up some parmesian bread, for sure. Anything braised like this deserves a side of crusty bread to soak it all up with.

Wow I thought I posted results.
I didn't much care for them. I think I used too much vinegar in the mix. I'll definitely try them again with a different recipe though.
