Moisture of grain spawn
    #14045019 - 02/28/11 08:24 PM (13 years, 5 days ago)

I am creating some grain spawn and I used 1 quart jars with 200g rye, 220mL water, and 1g gypsum.  I placed all the ingredients in my jar, let soak for a day to allow any bacterial endospores of other fungi spores to germinate, and then placed in a canning pot for 1.5 hours with water boiling and the lid on.  This is my second round of grain spawn, and my question is how wet is too wet?  There is no standing water in any of my jars.  There is, however, little drips of water at every point the grain contacts the jar.  Is this too wet?  I think so long as there is no standing water it's probably alright?  Thanks Shroomery.

When moving onto grain spawn it is IMO 100% necessary that you pressure
cook your grain. As far as moisture content of the grain, try out the
paper towel/toilet paper test before loading your jars. A tablespoon
of grain placed on the paper towel for 1 minute should not leave any
moisture spots behind. This is how you know your grain is dry enough
to load.

Also note that shaking your jars after they come out of the PC will
help to redistribute the moisture content.

You really need a pressure cooker for grains, and I've never been a fan of putting grain and water in a jar and pressure cooking. I prefer to simmer to desired moisture content then dry exterior of grain, before loading into jars. No way to answer question really though. Maybe it's alright, maybe it's not. Either way, best of luck.

I've had jars like yours (tiny spot of water where the grain touches glass) that colonized just fine.  I don't know about not pressure cooking grains though.  Good luck.

I give it no more than three to four days and it will be rancid as hell.  Grains need to be sterilized.  If you'll properly prepare your grains first before loading the jars, you can steam-sterilize that way, but do it for 8 hours not 90 minutes.

My grains got up to pastuerization temps for a total of one hour, is this not sufficient?  Why is sterilization necessary and pasteurization falls short?  Also, will there be visible contaminants in my grain if it does go bad?

That is not sufficient at all. Like RR said if you are going to
STEAM STERILIZE your grain jars you must steam them for upto 8 hours.

If you do not sterilize your grain properly it will contaminate.

We sterilize our grain spawn to kill off most contaminate spores.
This gives our culture a head start in colonizing the grain before
other organisms can take over the nutritious food source.

When your jars go bad you will notice a foul smell, along with a
vast array of colorful molds colonizing the grain. You MUST sterilize
grain.

Taken from Wiki:

Sterilization:

Quote:

Sterilization (or sterilisation, see spelling differences) is a term referring to any process that eliminates (removes) or kills all forms of life, including transmissible agents (such as fungi, bacteria, viruses, spore forms, etc.) present on a surface, contained in a fluid, in medication, or in a compound such as biological culture media.[1][2] Sterilization can be achieved by applying the proper combinations of heat, chemicals, irradiation, high pressure, and filtration.

Pasteurization:

Quote:

Unlike sterilization, pasteurization is not intended to kill all micro-organisms in the food. Instead pasteurization aims to reduce the number of viable pathogens so they are unlikely to cause disease (assuming the pasteurized product is stored as indicated and consumed before its expiration date). Commercial-scale sterilization of food is not common because it adversely affects the taste and quality of the product. Certain food products, like dairy products, are superheated to ensure pathogenic microbes are destroyed.[3]
