Hakims Fuck-you-up Chana Masala,

Ingredients:

  1 can of chickpeas (garbanzo beans yo)
  3 tablespoons oil
  1 teaspoon cumin seeds
  2 bay leaf
  3 cardamom pods (so bomb)
  1 tablespoon gram flour (garbanzo flour)
  1 large tomato
  1/2 to 1 cup diced red onions
  1 teaspoon ginger paste
  1-3 Chopped habenero peppers
  2 teaspoons coriander powder
  1/2 teaspoon turmeric
  1/2 teaspoon red chili powder
  1/4 teaspoon garam masala
  Cilantro and thin tomato slices for garnish. and of course salt to taste.

1. Blend the ginger, Tomato, and habeneros into a paste. Avoid it being watery.

2.Heat oil in a pan. caramelize the onions for 2 minutes or so.

3. add bay leaf, cummin seeds, and cardamom pods(you could always crack the pods and mash the seeds up some people prefer this because the pods can be unpleasant to bite into for some)

4. when the seeds begin to pop and crack, add the gram flour and cook and stir for a minute

5.Add the tomato puree, coriander powder, turmeric, red chily powder and cook for about 4 minutes on medium heat. Note: Those sensitive to heat might get burning/watery eyes because of the habenero in the puree.

6.Add the chickpeas and a half cup of water and let it cook for 7 to 8 minutes on medium heat, covered.

7. Mash the Chickpeas so about 30-50% of them are squishy to give it more of a gravey effect. You can also add a bit more water if its lacking.

8. Salt to taste and add the garam masala. Garnish with cilantro and thin tomato wedges.

It is VERY hot but also very delicious over some rice cooked with cummin powder and tumeric.

mmm, that sounds fucking delicious. I used to make like eggplant, zucchini, tomato, gyros for my veggie ex.

Veggies tacos, ain't that some blasphemy.

A good hummus is always good.

Vegetarian gyros, how does that work then :macdre:

I've been cooking pescetarian (meat no, fish yes) for about 5 months now, can't say I miss meat in my diet.

The list of possibilities is endless. Yesterday I made a vegetarian pasta, might as well include the recipe here:

Ingredients:
- Pasta of your choice; I prefer fusili, farfalle or penne for this dish.
- Can of diced tomatoes
- Some anchovies in oil
- 1 medium/large onion
- Garlic to taste
- Pine nuts and/or parmesan
- Herbs...oregano, basil, thyme, lovage, black pepper. Or use whatever you fancy.

Preparation:
- Bring large pot of water to the boil
- Put anchovies in hot pan on high heat and let soften. Crush them a bit to make little pieces.
- Chop onion and sauté with anchovies until soft but not brown
- Add garlic and sauté for another minute or so; don't let the garlic turn brown and bitter!
- Add tomatoes and stir a bit, turn heat low
- Cook pasta 'al dente' while letting the tomato sauce simmer
- Mix pasta and sauce, top with parmesan and/or pine nuts.

Here's my simple vegetarian recipe..

1.Acquire lettuce
2.Wash lettuce under running water.
3.Peel piece of lettuce off.
4.Munch on plain piece of lettuce.

Alright here's a real recipe..

I eat meat so i won't put all the ingredients up but it should taste alright..

You will need.

Potatoes.
Beetroot.
Onion
cheese, (exclude if you don't want it)
coleslaw.
sour cream.(dunno if u can eat this either)
Garlic
Butter.
i use bacon as well..



Boil the potatoes till they are soft but not mushy.
Chuck em in a pan with some butter and garlic and cook until crispy, meanwhile cut the onion & beetroot up. Grate cheese if you want it in there.
Chuck the onion in once the potatoes have a few minutes to go.
Put the potatoes on a plate/bowl then add the coleslaw and beetroot (if using bacon cook the bacon and onion together, not with the potatoes,put the bacon and onion on before the cheese) Then top with abit of sour cream and your done.

I nuke it for 30 seconds to half melt the cheese afterwards.

Im not a fan of fake meat but when I make "american tacos" I buy fake ground beef thats actually pretty fucking good.

And about pescetarianism. I think thats what Id have to qualify as..I just cant give up things that swim hahaha.

I would just bake the veggies tossed in this greek sesoning with a bit of olive oil stuff in a pita topped with feta.

I'm a real sucker for some lamb though, makes me drool just thinking about it.

Here's what I refer as

"Ricey Chard Thing"

Veg broth
1 tbsp soy sauce
1 cup brown rice
1 shallot or 1/2 onion
1/3 cup almonds
1 tsp lemon juice
Bunch of chard (dice stems into 1 cm bits,  slice leaves into 1 inch strips)
Olive oil
1 tsp minced garlic
1 tsp ground ginger
1 tsp cardamom
Dash of pepper
optional: 2 tbsp parsley, 1/4 cup raisins

-cook rice in pot with veg broth, soy sauce, cardamom

-toast almonds in pan then put aside

- in the pan, heat oil & cook shallot, then add chard stems. Once soft add garlic, ginger, then add leaves and lemon juice and let braise a little with lid on. Stir every minute so as not to burn. Could also add some water if necessary.

-When braising is done add into the rice and stir together.

-serve and top with parsley & almonds!

Another.

Curried Tofu with Apricots & Almonds

4 tbsp sliced/chopped almonds (raw, to be roasted)
2 tsp olive oil
1/2 block tofu
1/2 cup onion, chopped
2 garlic cloves, minced
1 tbsp ginger minced
2 tsp madras curry powder
1 1/2 cups veg broth
1/2 cup dried apricots chopped
1/2 cup green onion chopped
Salt
Pepper
-serve with rice

-slice tofu into chunks and let marinate a while in a little oil, curry powder, garlic & ginger.

-Roast almonds in dry skillet for a few minutes, Remove then set aside

-In the pan, heat oil & cook onion, then tofu with garlic, ginger.  Add remaining curry powder, salt, pepper.

-Add broth, apricots. Bring to a boil, reduce heat, let simmer for 10-15 min until it has reduced and thickened a bit

-serve on rice, top with green onion & almonds. :crazy2:

you can have my dashi kitsune recipe, its vegetarian and fairly basic, the one very important thing I forget to mention is the Kelp, which is vital for dashi to be dashi.

Once she has rested, pull it out the fridge, and cut a square out of it, you can keep the scrapes and flatten em out and cut some more noods out. Ok flatten it out and roll it to about a 1/8" thinness, dont forget to flour the surface you are working on , then flour the top surface of the dough, cause youll then fold it in half. you'll then want to use a very very sharp knife, as you are cutting them try as hard as you can not to stretch them but to slice, you'll notice as you come to the ends generally this is when they are most likely to stretch out, it works easier most times to slice all the way till the end then chop down and youll have a perfect slice. You'll want the slices to be about 1/8" so they are consistent, splash a bit more flour on them so they dont tangle up and stick together. You'll want to cook them immediately once you have them cut, usually what I'll do is I'll make a big batch of the dough, you can save the dough in the fridge, and then I'll cut them when I want to eat them. Get the largest pot you can muster put as much water in it as you can, put a generous amount of salt in aswell, these noodles fresh are extremely starchy so if you need to cook to batches I would advise changing the water in between.  Cook for aboot 4-6 minutes depending on the size you cut them, they will begin to float once they are done, and you'll notice the color changes aswell. Remove from the water drop into some shocking water(ice/water), almost like your blanching them. Once they are chilled they are good to go, you can then save these as they are , or cook em up, I'll post some recipes using these udon's in my next post. When I make my next batch I'll take some pictures.

I absolutely love udon's they are one of my favorite noodles, hopefully some of you can appreciate the simplicity involved here and enjoy them as much as I do.

actually after having made that thread awhile ago , I must say that wheat flour works just aswell and is equally delicious. Asfar as preparation goes, one easy way to slice them is to use a dowel , and roll the dough around, and then slice accordingly.
