Vacuum chamber for drying mushies

I got this idea from the thread. Will mushrooms grow in a vacuum. What do you guys think about a vacuum chamber with removable lid bolted down and gasket. I could put a small threaded fitting into chamber which would hook up to my 5 cfm vacuum pump (pump for pulling vacuum into refrigeration lines). The pump is designed to pull moisture and all atmosphere from lines down to less than 500 microns depending on how long it is running and how big chamber is. With a small chamber i could easily get well below 500 microns. I know that this would sufficiently dry mushies but what i dont know and what myc0ph1l3 suggested is that the h20 while boiling off would wreak havoc on the cell walls and affect potency. Anyone have any thoughts on this? Also it seems to me that this could possibly be more effective and better drying than using heat or dessication chemicals.

the moisture has to have somewhere to go, so flow through at negative head would be a must, the boiling factor would not b a problem because it would be low temp, but the incoming air would have to be perfectly dry to pick up maximum moisture, passing it through a collum of corn starch that has been heat dessicated would be effective, but your energy cost do do this would be prohibitive. I have found that lots of dryish air passing by is the most effective way to dry mushies, in a second story space with a non insulated metal roof in the summer can be @ 100 deg F in the shade, perfect for the drying of the mushes.

boiling could very well (almost definitely) be a problem, as boiling point is dependent not only on temperature but on H20 partial pressure... hence the lower boiling point of water at higher elevations (lower air / H20 pressure).  in a 100% vacuum environment water no longer exists as a liquid but spontaneously evaporates as there's no pressure holding the atoms together and even the slightest entropy allows them to fly apart.  this is a cool idea but i wouldn't recommend trying it. i'd be pretty concerned about seriously damaging tissues... just think about the water that makes up 90% of the mushroom spontaneously expanding to 1000000x its previous volume.

i'd say save yourself a big hassle, spend $40 and get a food dehydrator from nasco.  works like a charm, every time.

ok ya thx i already have a food dehydrator. i was just wondering if this process COULD be possibly better than using heat to dehydrate. ya the only principle it works on is negative pressure which bring boiling temp of water down and down until there is no water. COMPLETELY sealed chamber except for ONE port used to suck out NEAR ALL atmosphere.. using simply my pump which vacuums MUCH larger spaces than would be needed here. thx for info

It would work and you'd get pretty close to perfectly preserved specimens, though you might have to tweek it a bit, bringing it too close to a vacuum too soon could cause tissue damage. And I'm not sure what else you'd be pulling off as you created the vacuum so depending on what you're drying it for and what's coming off with the vacuum treatment, it may be a problem.

I had a vacuum dessicator years ago, but I prefer a good ole nescoe all american these days.  it only got up to like 5 psi and took forever anyhow.  i ended up stopping using it to dry mushrooms, and starting to dry crystals with it:)
