There are far too many great recordings out there to recommend just a few. A lot depends on what kind of music you respond to best.
If you're really serious about learning more about classical music, I have a couple of suggestions:
Pick up a copy of Aaron Copeland's "What to Listen for in Music." This is a very helpful, basic beginner's guide to appreciating classical music. A slightly more advanced guide is Jan Swafford's "Vintage Guide to Classical Music" which also has suggestions for good recordings.
If you are serious about building a collection, check out "The Gramophone Good CD Guide" or "The Penguin Guide to Compact Discs," both of which give great advice on which recording to choose for a given piece of music. All recordings are not the same.
If you're not that serious, just pick up a few recordings at random from the Naxos label. They're cheap (about $6-$7 per CD) and the quality of their performances and recordings is generally pretty good. Who knows, you might discover something that really moves you.

franz schubert's: death and the maiden aka: (der tod un das madchen?) germans, correct me if i am wrong on that translation.
apocalyptica: for some hardcore, more modern classical.
mozart
alexander scriabin (hard to find, but good)

fernando sor, matteo carcassi, dionisio aguado, fernando carulli, gaspar sanz, francisco tarrega, segovia, and villa-lobos. there are also modern guitarists like john williams, gypsy kings, and others. they will totally blow your mind. especially this chick that is real famous right now. i can't remember her name. i think she was a protoge of segovia. she kicks major ass. check around; i can't remember all the good guitarists off hand. there are too many.
