I spent 45min last night preparing what I thought was going to be a NE clam chowder, so that I could bring it up to my girl's work today and we could enjoy it for lunch. 10hr cook time in the crock pot -- perfect, I got done at 2am.
Here's a link to the recipe I followed: http://www.bakedbyrachel.com/2010/11/slow-cooker-new-england-clam-chowder/
Just went to check on it and the godddamn half-and-half curdled. So now that i'm thoroughly pissed, I'm requesting your recipes.
I like my chowda'h thick 'n'creamy - so dont post up any thin watery mess
Thanks. I need this to brighten my day.

Quote:
If the chowder has separated during cooking or reheating you may be able to bring it back together by removing it from the heat and, using a fork, mixing in a small container a little slightly-cooled chowder with cornflour or rice flour (not ground rice). Return chowder to a gentle heat and slowly stir the flour mixture into the centre of the soup, whisking with the fork as you stir. If the chowder is coming together you can raise the heat, still stirring, until it looks good again. Serve immediately.

There's millions of recipes and it doesn't take all that long to cook. 10 hours seems too long to expect cream and fat to remain together.

Makes sense. Turns out it just looked terrible, but tasted fine I brought a cup of it to lunch w/ my girl just to show her how hard I failed, but she insisted that "i've ate soup that looked like that before", and took a bite. After seeing that she didnt die, I tried some, and it wasn't awful. In fact, it tasted pretty good
Thanks for the tip on making it look decent again. It is just SO visually unappealing.

I make this corn and lobster chowder that comes out really good
1 russet potato, peeled and cubed 5 slices bacon, diced (optional) 1/2 onion, chopped 1 lobster de shelled 1/2 teaspoon parsley flakes 2 tablespoons butter 1/3 cup all-purpose flour 1/4 cup dry white wine (optional) 1 Tbl chicken bouillon 1 1/2 cups milk 1 cup corn salt and pepper to taste
Directions
In a saute pan, cook bacon over medium heat until heated through,
Melt butter in a large stock pot over low heat add chopped onions. Cook and stir until onions are clear. Whisk in flour until mixture becomes creamy and takes on a eggshell color. Continue to cook for a few more minutes, stirring occasionally. Stir in wine. Dissolve chicken bouillon in milk; when the flour mixture is crumbly, slowly whisk in the milk. Mix well in order to eliminate all lumps. When the mixture is creamy and hot, stir in bacon, lobster meat, parsley flakes, cubed potatoes, and corn. Season with salt and pepper to taste, and simmer for 10 minutes or until potatoes are soft.
For a creamy curry variation add 2 tablespoons curry powder after adding the wine to the flour mixture, and substitute cooked, cubed chicken for the bacon.
