After the 12-24 hour soak the video says to go directly to the stove and bring to a boil....
My question is- Do I pour out the water its been soaking in with fresh water before I bring to a boil?

Either way, you're good.
He says in the video he used to use the same water, but now exchanges it for fresh water, because his septic tank likes the soak water...

no you dont. i was confused about it too, but it seems to be no problem. the soaking water is also enriched with coffee and gypsum, so it would be additional effort to have it poured out and add coffee and gypsum again.

I ask cause the soak water has the gypsum, but after the soak the water looks worst than it didnt when I initially rinsed out all the "dirt, grass and bugs" haha...
Dont want my grains to get sticky...
what do you do yourself

You're going to be sterilizing the grain anyway, so either way, it's not really an issue.
I actually used to replace the soak water with "clean" tap water after the soak, but now I just throw it right on the burner and start it up!

I boil in the soak water, and sticky grains are NEVER a problem. Quite the opposite, my grains are quite independent and free-flowing in the jar. I attribute that to boiling in the gypsum and giving them sort of a non-stick coating.
