Something with the word "engineering" in it.
Biological engineering comes to mind. You seem science-minded, you can actually get a job with an engineering degree.

Hehehe - why I was half sarcastic... but regardless of what you learn it seems like a really badass place to spend a few years.

This is true.
Picking a major is the wrong first step in college. You have to think about what you want to be doing five or ten years down the line and then pick a major that feeds that goal.
Also, a lot of subjects you can major in won't get you much of a job. I know an English graduate and an anthropology graduate and they both work as secretaries for the same law firm.
Scientific subjects are where things are really wide-open. You can do freelance research, you can work for a government agency, you can get a job with a corporation, so on. That's a degree you can really do things with. So figure out what interests you scientifically, then go start taking science classes and see if you love it or if it makes you want to kill yourself, because when it comes to scientific proclivity not many people are in-between those two extremes. Then just keep taking classes in the fields that interest you.
Cognitive neuroscience FTW, baby. Psychology, backed up by biology and chemistry and computer science, with a smattering of physics.

I like all the same stuff as you, I'm working on a degree in kinesiology and studying for the ACSM health fitness instructor certification, then joining the marines so I may never use my degree/not use it for a while.
I love my major and the career field is growing because of the baby boomers trying to postpone death and this country is so fat we have job security like no other. Not worried about my future at all, very optomistic

The campus was pretty and the women even more so, but the education is a crapshoot and Olympia is a weird town.
