Lesson learned.

2 cups semolina and 1 cup all purpose and the pasta was a bit tough...

Don't get me wrong, it was tender to eat but it wasn't melt in your mouth.

Ravioli filling needs to be loose, my meat was way too lean and everything turned out more like dumplings. 

Tasty Tasty dumplings...

some good raviolis also do taste like dumplings.


you might want to consider doing some basic fillings, like goat cream cheese or butternut squash.



meats can be a lil trickier, because you dont want to overcook em before stuffin em.


Especially with lobster.  That shit has to be still near-raw before stuffing into ravs.

try 100g semolina or half and half to 1 large egg and about a tablespoon of water and some salt

i think your raviolis were more like dumplings because you filled them with quite a bit of mixture, which isn't necessarily a bad thing  :naughty:

It was a bit too thin.  I was surprised because that was rolled out on number 4.  Number 1 setting would be ridiculously thin, too thin for any practical use. 

They did hold together nicely when they cooked the pasta got thicker and a bit more firm.

If your dough sticks to your hands, it will stick to your machine..

Don't be afraid to use flour.

Sooo many recipes, I can't just post one.  Every one is just a variation on the other..  Just get the flour mixture workable and noodles will happen.. 

Some better than others for sure.  I'm a keep trying.

thanks, has anyone made a chocolate pasta that's tasted decently chocolatey as well? I followed a recipe using cocoa powder and it was pretty bland..

You should really try and look for type "00" flour from Italy. Makes a big difference in pasta texture.
