Dunking Temps and Bacteria?

I was reading somewhere about warm temps causing bacteria to germinate while dunking? Is this true. Because i just set a few cakes into water and i set them in my closet where the other jars are incubating where the thermometer reads 72-73F

But the heat from the heater in the bottom of the closet rose up into the top where the dunking cakes were at, probably making it hotter than usual... I took them out and put into a different cooler room.

Should i just put in the fridge? Aren't fridges really dirty? And do i have to worry about the dunking cakes being in a warm closet for 5 hours?

Just dump the water out and replace it with cold tap water if it warms up too much.  You really only need the refrigerator if it's above 100F/40C in the area you're dunking.  Below that you're fine.

MY water is so cold here it would never reach that temp in 24 hours lol
my water is so cold it actually hurts to hold your hands under it, and keep it away from the stove ...from personal experience
