Like a tree trunk? I don't think you're supposed to put it in a bag. Maybe seal the ends of the dowels with some wax.

yep, and inoculating a log that you don't know how long since it's been cut is hit or miss, mostly miss.

If they log was cut in the winter you have longer, because nothing else is probably going to get a foothold in the log. In the summer, if it's longer than a month, your at the very least looking at guest fungi, besides the one you're trying to grow.

No, the log cut from a living tree will have enough moisture.

Cottonwood trees are good for growing mushrooms, but that thing looks like it was cut a few years ago. I'd be very surprised if you get anything to fruit on it. RR

These cracks were not when inoculated, I think they have gone out due to dunk it and because the heat. What I fear most is to keep it alive during the coming warm months. Now temps are about 30ºC during the day and 20ºC in the night and in the summer must be about 37ºC by day and 30ºC by night (hope only on August), so my questions are how much and how should I give the necessary moisture to keep it alive?
