Hey guys, Im doing some BRF Jars in a pressure cooker. Should i be working this at 15psi for 90 mins? or should I dumb it down? I'm afraid of over cooking

90 minutes @ 15psi is sufficient for the sterilization of brow rice flour cakes in the pressure cooker. As an extra measure to sterility, sterilize at higher psi's for 90 minutes, if you have the capacity, or sterilize for 2 hours @ 15psi.

really Ham? I've been doing 30-45 mins for brf jars in a PC, and 90 mins in a steamer... no contams for me yet, but then again i'm very sterile when doing my jars...

brf cakes would be straight after a half an hour at 15 psi......45 for safe measure...90 is overkill. 90 is necessary for grains. but NOT BRF.
please look this information up for yourself RATHER THAN go 90 minutes in fear. LOL

My findings:
For steaming BRF cakes I cannot get good results with any less then 2 hours of steaming. Even at only 90 minutes of steaming I would still get a contam rate of 25% or higher. Those extra 30 minutes bringing the steam time to 120 minutes changed the ratio to 100%.
As far as PCing BRF cakes I usually stick to 60 minutes.
When grain is involved for smaller runs/smaller jars Ill do 60 minutes, for larger jars and full runs ill do 90-120 just to ensure that the centers of my jars reach sterilization temps.
The fact is a lot of variables play into sterilizing and inoculating substrates. Spore load in your residence, altitude and elevation from sea level, materials and tools used etc.
Sometimes in this hobby you learn by trail and error, what works for one might not work for others.

totally agree....What works for one might not work for others. I too steam sterilize my BRF jars for 2 hours. I did that for a crapload of jars and they colonized good, 100% without contams. Then I through in a batch of BRF into my pressure cooker and cooked at 15psi for 90 minutes....Through off the moisture content and shrunk the top layer of the mixture...Maybe it was my cooker but I'm sticking to what works

Thanks I've just had a string of failures and the only common link is the pressure cooker so im being cautious.
My intentions were to pressure for 60mins i ask these questions because i have looked for this information but there is a broaled range of opinion or said info is found with the search inside of indirect threads (People not talking about the same situations)

Try a batch with steam sterilizing, in a pot, no PC....Do it for 2 hours....
