Would you believe it, I woke up this morning and my St Bernard was boiling up jars! Well, he read and read, then read some more (first time - pftek, followed directions, understood the steps, read the FAQ, etc) and I think everything is going fine but...
He has some condensation on the sides of some jars, and some of the sides do look a little "pasty." The FAQ says too much water is when it pools at the bottom of the jar. There is definetly not that much water, only condensation. Lids are tight, and innoculated 2 days ago. In rubbermaid at about 80F. No mycelium yet, if there was I would just leave it alone. My question specifically is if he should crack the lids on the ones that are a little pasty and damp looking?

Condenastion is normal, but the lids shoudn?t be tight.

Take the tape off the holes...you should be fine

Thanks for the info. If I take the tape off, should I be extra careful of contaminants, or will the dry layer be enough protection?

I disagree, my friend told me that he waits until a little later to take the tape off, the holes are a vector for contams. There is enough O2 in the jar, with the tape on, to satisfy the mycelium for at least a week and a half, he says, and that you should give it a fighting chance before taking off the tape. He says that he has used pint jars with bird seed and still didn't need to take off the tape, he just kept the jar lids loose. He says that what he means by loose is when the jar is backed off a quarter to a half turn from being tight. That will allow air exchange.

For those who never use tape, he believes that you must have a very clean house. He is jelouse.
