I have Finally been able to Fruit this mushroom after a lot of tries.
Here are some Pic's




The problem That I have now is the flavor.
I had somewhat high hopes for the taste of this species as in every place that I see them described states... "Hypsizygus tessulatus is an oyster-like mushroom with a superior flavor and texture" "This Mushroom is considered one of the most Gourmet of the oyster-like mushrooms" "A superior edible mushroom with a Firm, crunchy texture and a mildly sweet nutty Flavor" "The only two mushroom that come close to this specie are H.Ulmarius and Pleurotus Eryngii"
Sure after all of that this species must be at least palatable. I was Exited so I cooked some up in the usual way I cook oyster.
When they where ready I took a bite and.... This has to be one of the biggest JOKES that The mushroom community has played on me.
The taste was so BITTER that it is unbearable. I thought that I had messed something up so I go to the grow room and eat one raw mushroom straight from the block and they had the exactly the same taste as the cooked ones.

The I bought the culture in sporeworks and it was grown in oak sawdust.

Looks like you had some great results, nice work. I don't know much about edibles, but I know oak has a lot of tannins, which are bitter. Maybe leaching the substrate would help, IDK Maybe using maple or alder?

Most sites mention a bitter flavor that "disappears upon cooking". Maybe it needed to be cooked more?

Yeah, most of the time they are somewhat bitter, sometimes they are very bitter.
If you pan fry them in oil till they are dried out and turning brown, but not burnt, they aren't bad.

I bought some from the store once. I thought they tasted like rubber tires and the smell of gasoline.
Haven't had a chance to grow any yet, but I've got a plate kicking around.

I think we got a syringe of them from a sporeworks grabbag at one point. Plus, my fiance likes them.

This will sound strange: try parboiling them for about 5 minutes then drain them...then proceed to saute them in neutral oil and a little butter.

that's wierd. I bought some at the store last year and they were some of the best mushrooms I've ever eaten.

Even cooked well, I find they have an after taste I don't like much - a bit like undercooked Shiitake. Maybe it's a strain thing. Pioppino and roast Eryngii all the way for me!

I am going to try cooking/boiling them today to see if they are any better.

The rubber tire taste is exactly right.
I really think that people just read the GGMM and blindly believe it instead of actually eating them because I have a couple of cook books that talk about this mushroom and not ONE mentions the bitterness, also there is no mention of it in the information here, in sporeworks or ralphsters they just repeat what the Stamets said.
