I think in the long run, your 5 incher would out perform your 10 incher (heh), Because of the fact that the 5 incher could support a thicker casing layer thus keeping the contams away that much longer allowing for more(and bigger) flushes. Not only that but the fact that the casing layer serves as a water delivery system and microclimate for your mycelium. The 10 incher would have to have a thinner casing layer, which means less water capacity, which means less prolific fruitings. And whatever is there will be torn away in the first harvest leaving holes for contams to get ahold.
But really, the only way I guarentee you will increase potential yeilds is to increase substrate

why have a thinner casing layer? the mycelium still grows while the newly prepared casing is in incubation anyway.

thinner substrate layer=thinner casing layer

If you cut your cake in half, you will get a bigger initial harvest (1st, 2nd flush). But, the amount of shrooms you produce overall does not increase unless you add more nutrients.

So, to follow in Poke Smot's footsteps, the total mass of mushrooms produced is proportional to the amount of nutrients available to the fruiting mycelium. Now, some strains will be better at fruiting than others (will produce more fruits than others off an equal type and amount of substrate), but I believe the actual mass of fruit bodies will differ very little.

Of course, many factors go into the success of a large harvest, some of which are nutritional quality of substrate, optimum temperature, and optimum moisture (given NO contams present), but with all things equal I don't believe that over the long hall cake half A and B will produce more than the whole cake.

That said, most of us here are interested in more, faster, so crumbling and casing to create a mycelial mass that has more surface area to fruit from is the way to go for a large intial harvest. There are several reasons for trying to get more, faster, not the least of which is the possibility your casing may contam in three weeks, resulting in the loss of your crop.
