casing and contamination

Since an opaque container is supposed to be used when casing, how can you look for contamination? If the contamination isn't on the top surface, than it really can't be seen, can it?

Nope you have to go by smell really when you cant see into the medium.
From my limited expericence most contams first show on the surface any way.Thats if pasterisation was done correct.But thats just what i have noticed myself.
