if you sterilize jars for an hour, how long are they good for before they have to be knocked up????

What do you mean by knocked up ?
How long too wait before inoculating them ?
Wait till they are definetly room temp , waiting at least 6 hours should do it , but is okay to wait till next day . If to warm you will kill spores or myc culture , so is best to wait over night IMHO .

no, i mean much longer... i have jars that i have been sterilizing for the last two weeks and want to innoculate them all at once. is two-three weeks too long to wait??? they should be steril, it should be ok...
right???

You can let jars sit around for awhile , but is best to use ASAP .I have had jars of grain(pre sterilized) sit around for a month before inocing them , and they did just fine . The longer they sit around the more likely they are to become contaminated , so is best to make them up , when you are going to use them at the soonest possible time .
Now if you have been sterilizing them for the past two weeks ................ ????????? Overkill , waste of time and energy !!!

My boy batman sterelized some jars and waited 2 months before innoculating and he has 60+ pins right now so i dont see why not. BTW they were kept in the pc the whole time so i dont know but i would just keep them in a sterile place and should all be good.

Contams can be seen at anytime, but there should be no question if proper steps were taken. I have had many cases where a jar starts contaminating after mycelium growth and the mycelium will take it over.

It's usually wise, or at least effecient to use them as soon as temperatures allow. Otherwise, why did you PC the damn things in the first place.
