normal sour smell vs "sour rot"
    #1373160 - 03/13/03 01:49 PM (21 years, 7 months ago)

This was forwarded to me by the pizza delivery guy:

I've read that brf jars normally have somewhat of a sour smell before the jar is fully colonized. Is there a way to differentiate between this and "sour rot"? I wanted to reuse a couple of my jars that failed to colonize. I got a whiff when I opened it to clean it and it smelled pretty damn sour. I've attempted to clean it with alcohol and lysol but might end up just throwing the jars out.

Clean the jars in a 1/10 hot water/bleach solution. Rince with water and when theyre dry, if you want, sterilize with alcohol...but I really dont see any reason to go that extra step, except for piece of mind perhaps...
If it smelled REAL sour like that, its prob ably what u call "sour rot"..or contams...
Hope it works out for ya! Dont throw out the jars...$$$$!!!!

You can keep the jars, just clean them really good. If you can smell anything that smells the slightest bit sour coming out of the jars, especially if you can smell it without opening them, it isn't a good sign. Usually that means bacteria. I've used BRF for 6 years and whenever I smell anything out of the ordinary, they get pitched ASAP. They really shouldn't have any smell at all, I've never heard about a "normal" sour smell. Unless the smell of mycelium is considered sour to some people.
