Outdoor Enoki Fruiting

So I made up 4 bags of Enoki on supplemented sawdust and put 3 in the greenhouse, 1 outside on the porch. Couldn't really keep my greenhouse under 60ish, so they did okay, not great, then I got fungus gnats.

Ended up tossing the 3 in the greenhouse.
The one outside sat and sat, still getting eaten by gnats. I went out one day and it was full of water, so I dumped out the water and it sat some more.
Its pretty cold and rainy here, and now the Enoki are loving it!
    
They are kind of nasty so I don't think Ill be eating them, but I picked the big ones so the little clusters could develop.

Cool. What day and night temps did it reach outside? I have some enoki that I want to put outside but am afraid it might be too cold out.

I finally got a block of enoki's behaving and making the nice long stems:

First time I did enoki I stripped the bags off and the whole thing just got covered in caps and was a total pain to harvest. Temps have been fairly cool here. Low's in the 40's highs around 70. There was a week or so where it was really cold (into the 30's).

Night and day temps were pretty cold, I dont know exactly but Id say around 30-55 mostly. It froze one night, and has been really rainy.
2nd flush is still growing, I read that Enoki can freeze and thaw and still keep growing.

Crazy Shaman. I've been trying to get enoki going this winter. But I've found when things get pretty cold (under 40 around here) my enoki blocks slow way down. It may be the culture. Once daytime temps are in the 60's the blocks go crazy. I'm new to enoki so who knows. I like it though once it goes the whole block goes nuts.

That's crazy. I didn't know they could do that. So cool.
MonkeyKnifeFight, did you just open the top of the bag and fruit like that? no casing?

Yeah this one is going really slowly because its so cold, the mushrooms go through hell and keep on trucking though. This is my second Enoki, these were the first:
  
I think they did way better when I left them in the bag for a while to get nice and white. I also put them in the fridge for a week long cold shock before fruiting them.

Yeah those grew really well, that was a while ago tho, and in a controlled environment. This time I think I fruited them (the 3 indoor bags) too soon and had a bit to high of temps, so they got eaten by the damn gnats.
This outdoor block is cool to watch though. Its been too cold for bugs for a while now.

Enoki's are super cool looking. I definitely didn't case mine. Seems unnecessary. My biggest problem I think has been trying to fruit too soon. I've had the best luck once I've seen spikey little stems in the bags. Then I just clip the zip tie and puff it a little bit then use a rubber band to basically close the top back up so there's very little air flow. They seem to really like getting choked back.
I never really liked enoki's from the store but they have much more flavor super fresh.

Ive never cased Enoki, that bag got all torn up by gnats and the pounding rain, thats why it looks all raw.
I have the same problems, I think just waiting and letting them mature in the bag, then a decent cold shock is the way to go.
