When the jars fully colonize you can put them in the fridge and keep them for quiet a long time. (Months from what I hear).

When my friend used to make cakes, he would let them colonize 100% in the dark, then he'd give them another five days or so to make sure the inside is fully colonized. If any jars were far behind, he'd refrigerate the fully-colonized ones until the others could catch up.

Next, he'd take the cakes and, using a very clean course grater and clean hands, he'd grind them up. He layered the bottom of an aluminum baking pan with 0.5 cm moist verm, piled on three cm of ground up cakes in a very even layer, then about two cm of 50/50+ at pH 7.5 on top, also very evenly laid out.

He covered with foil and put it back in the dark incubator at 85F for about three days, then he patched any area where the mycelium was peeking through, uncovered the casing, and put it in the fruiting chamber with lots of air exchange. A few days later, pins showed up, and a week after that a bunch of shrooms.
