last week my friend mixed and filled 12 brf jars put them in foil and was gonna pc them the next morning..... but the next morning he woke up with a temperature of 104.5 and has had the flu badly until now....still hasnt pcd the jars......do you think they will be usable if pcd or should he throw the contents out

If they were sealed so they wouldn't dry out they should be fine.

jars dont last more than a day un pc'ed (thats what ive been told). Would you leave perishable food out for a week and then think its fine as long as its cooked?

my friend said they are sitting in the jar box in the basement which is about 45 degrees F dont know if that makes much of a difference or not

He said he has not PC'd them yet. When he PC's them anything that might have grown in those jars will be killed. Do you think some contaminant was able to consume all available nutrients in a week? Without even becoming visible?

It's remotely possible that a contaminant could, through metabolic processes, produce a substance toxic to mycelia, but I hardly think enough toxin could be produced in a weeks time to cause problems.

If I DID eat it after it was sterilized, would it kill me? Again, no.

yea, in my experience (which isnt much, a few fuck ups is about it.) jars left un cooked contam, take a small smell, you should have your answer.

what about sterilized jars? my friend has 6 sitting in his drawer, it's been a few days since sterilization, are they still okay to innoculate?

Sterilized jars are fine...as long as they have been sealed properly.

Howardo - depends on how long they have been sitting. a guy i know has innoculated jars that sat in the cooker for a little more than a week and they were o.k.- but to be safe he said you should probably re-do them.

Roadkill- by sealed properly you mean by tightening the lids right?

Tighten the lids, make sure there is tape over the holes, and cover them with something so contams aren't falling all over them.

Dog, when you leave jars unsterilized and the nasties set in, all sorts of potentially very harmfull substances are produced.

Most of them are not destroyed only by pressure cooking.

So, to correct your answer

"would it kill me? PERHAPS."
