i give you two guesses, and the first two don't count . it starts with 'c' and rhymes with science . something i am wondering about, they burn the inside of those whiskey barrels, could it be the carbon, or maybe the rye from the whiskey that makes this stuff so eatable ? any ideas ?

Cubes WILL grow on alder wood! 50/50 alder smoke chips/WBS multispore inoculation transfer to alder pasteurized in compost tea case as usual This tek is slow colonizing but long yeilding. It is not a good cake tek. It does seem to avoid contamination as I puposely am using just canning cleanliness(no heroic measures, flow hood, oven tek, just bleach counters and go)and have only tossed a few experimental jars. I have used this tek with B+ and GT's with huge fruits and great success. The WBS germinates first and I believe the fungus begins secreting enzymes which eventualy digest the wood.IMHO any cube can be "trained" to wood as they all use a cellulose substrate whether it is grass or wood, even poo is largely cellulose. PS A rich hoppy ale added is helpful in preventing contamination as hops have selective antibiotic properties which inhibit bacteria but do not inhibit fungi(yeast, etc).I have had a box friuting for 3mo now at 1.5 dry/week.It is 16"X16"X8" deep and solely wbs/alder spawn and pasteurized Alder/poo water.Cased with cat litter and peat.
This is 1/3 of the 7th flush. SMOKE CHIPS RULE! WR

you could get a flush like that on the spawn alone, are you sure it wasn't the spawn providing the nutrients?

Nah,You can see the decomposition occurr in the alder and in the total substrate there is only about 3pts of WBS the rest is all alder and poo water.Once the Myc gets over onto the wood the cellulose starts to provide nutes. The poo water helps get it going and I'm sure helps it along. This like I said has worked for ALL Ps. sp.I have tried,I have not tried Pans. What they put into these barrels is 140 proof alcohol. There is nothing in it except alcohol and water. Jack Daniels gets it's flavor from the wood resins that the alcohol sucks out of the wood. My guess would be that the wood has just been defatted, and deresinated. BTW, that's why they don't make great wood smoking chips, they don't have Jack Daniels flavor added they have had the Jack Daniels flavor that naturally exixts in wood removed from them. The JD charcoal is from the charcoal filter that they filter the 140 proof alcohol straight from the still through. It has no flavor. If you want your meat to taste like Jack Daniels I suggest you just put Jack Daniels on it.

i agree it is not the best for smoking meat, i prefer fruit wood for that . and, it is more expensive because of the name, but mycelium sure seems to like it .

I'm not sure how old the barrels are before the 70% ethanol is added, but I know they sit like that for 7 years.
I think the barrels are pretty well aged before that even.
