do cakes bruise before pinning..

i have a ?. i am studing my cakes and i see some bluish areas around some of my pins. Me being paranoid i said HMMM.. from what i have read mold grows from the inside out right? Meaning if it was mold there would be some mold in the cake right? SO i steralized a knife and cut a small peice and there was no green inside the substrate.. Am i good, is this normal, or is it time for worring?

not necessarily. it's probably just bluing.

yea i hope.. it does look more to the blue side than to the green side..

Take a piece of paper towel... lightly blot or scrape the blue areas in question with the paper towel. If some blue/green residue is left on the towel it's mold, if the towel is clean it's brusing.
