I am not 100% sure but I think you just need to pinch them like when you check a tomato in the store.  That's what my lawn gnome say's he does.

i can just imagine that stupid add with the lady, the two tomatoes and the toothbrush...except with shrooms :grin: thanks for the help dude

an effective way to check for a bruising reaction is to seperate the stipe and pileus then, using a sharp knife, slice both the stipe and the pileus in half lengthwise then, using the blade of the knife at a right angle to the flat sliced edge, scrape untill the flesh is somewhat frayed. it can take up to an hour for some bruising to occur, but it usualy occurs within 5 min.
the reason for bruising both the stipe and pileus is that in some mushrooms only one or the other will bruise noticably.
