Up against the jar!
    #1344448 - 03/01/03 07:53 AM (13 years, 7 months ago)

The Ghost of Christmas Past came to me last night with a question: He has a cake pinning invitro in quart jars, and although it's coming along beautifully     , he noticed some of the pins were pressing themselves quite hard into the glass.  He was concerned that with all the condensation on the side of the jar, and the mushies squished up against the glass, they might rot and cause contams.... Will the mushies correct this problem themselves, or should he slide the cake slighly away from the side of the jar?  On behalf of him, thanks in advance.

If you go to mushmush.nl and look at their invitro pics, you can clearly see that the end fruits are packed and sqooshed in the jars, conforming to its shape and the fruits aren't picture perfect but just as good. Goes with the territory of doing invitro. Should be fine as long as the moisture doesn't get too high, at which point you do some kind of air exchange. Mushmush has a really nice, illustrated invitro tek, go check it out.
