Agaricus for Dinner

While the shroom season has started this also means we are sure to find heaps of field Agaricus for Dinner. Yum Yum



Has anyone found good eating mushrooms like these?

Mr_Mushrooms makes a good point. The first photo looks to me like there may be yellow staining on the cut stem. Unfortunately, Agaricus is one of the more difficult genera of mushrooms to identify accurately to species. And several species are poisonous, causing acute gastrointestinal distress. David Arora (the author of Mushrooms Demystified) refers to Agaricus as the "lose your lunch bunch". So take your time and be as sure as you can of your ID.

To check for bruising, cut the mushroom in half vertically and use the edge of your knife to scrape (not gently - you want to bruise it) the inside of the mushroom. Then set it down and watch for color changes. Most changes will occur within a few minutes, but it can take up to an hour. The color chagnes can be different in the cap and stem, so note where the changes occur.

When you cut the mushroom is also the best time to smell it. You should check the base of the stem and where the stem joins the cap. Sometimes using your fingers to crush (don't overdo it and destroy the mushroom) the base of the stem will increase the strength of any smells produced. The smell you hope you don't find (if you want to eat them) resembles phenol, ink, or library paste. If it has a sweet smell (similar to almond extract) or a "mushroom" smell (like the ones from the store) then you're probably OK. I say probably because Agaricus mushrooms cause a lot of idiosycratic reactions - that means that some people get sick eating mushrooms that are edible for most everybody else.

When you get some you want to eat, eat just a small amount (the size of your fingernail) the first time and wait overnight to see if you feel sick. If you feel OK, then those are fine for you. Don't just go for it at first - if you're going to get sick, a small amount will make you less sick.

Having said all that, I enjoy Agaricus as some of the best edibles around.

One of my top two overall in taste is Agaricus augustus  :smile:
