Casing Question
    #1334712 - 02/25/03 01:52 PM (14 years, 6 days ago)

So my friend was wondering if a food mixer or whatever that cuts up vegetables would be good to cut up cakes if he were to use a casing method. If so does this help with overlay? Is overlay only after the cakes are cased or can overlay occur in a jar also? He appreciates any help.

Yea it will work. I dont know about the overlay, and if you use it atleast try to be alittle sterile. Lysol it up

No, not in the casing-technical sense.

I reccommend slicing the cakes into 1/4" rounds rather than crumbling. Doesn't create gaping holes in the casing when harvest time comes, at least from what a friend told me.
