no pins / humidity?

ok so its been like 3 days after my boyr cold shocked his first cake and nothing yet.. I think that its because of his perlite issue and I was told that by adding another 1" to his exsisting 1" would do the trick. Now i am at 90% rh and its being a bitch to get it to go higher. so with this in mind if someone can kindly let me know whats the dealy..
1. how long more or less does it take from cold shock to pinning?
2. how much perlite do you use? 1", 2", etc..
3. Should i have just from now on let the ckaes pin first in the jar and then birth them?
Reason that my boy cold shocked was since some of the jars were pulling from the glass he wanted to rehydrate them plus i was told it was really benificial.

ya, my friend in bali was trying to fruit some and the humidity dropped down to 50% for a while, the mycelium on the outside of the cake dried, prventing the formation of fresh hypal knots. Eventually it pinned on the underside thanks to the wet vermiculite. Patience...

i had that happen to me once or twice, its really a bummer when you see that fresh fuzzy myc die off into nothing 
(insert your case of choice here) is always the best strategy towards pin initiation though,
