I've got chilli sauce, minced meat and red beans.
Do I need anything else to prepare the chilli? If not how do I make it?

Man there are so many different chili recipes out there, its staggering. My interpretation of "Chili" means that there needs to be "Chili's" in it. Hence the name. Go down and pick up a good selection of whatever you're local market sells. Meat of your choice, beans of your choice, an onion maybe, some garlic definitely, tomato's diced or sauce. Dump all that shit in a slow cooker with some salt the night before. Set it on low and have it for dinner the next night. Oh yeah, if you use some dried beans, follow the directions for how much water to add.

I think I'm going to try this recipe next time I make chili.
3 dried ancho peppers, stemmed and seeded 2 tablespoons dried oregano 2 tablespoons sweet paprika 2 tablespoons whole coriander 1 tablespoon cumin seed 1 tablespoon chili powder 3 tablespoons extra-virgin olive oil 2 onions, chopped 3 pounds beef chuck, cut into 1-inch cubes Kosher salt and freshly ground black pepper 6 cloves garlic, chopped 1 canned chipotle chile, chopped 1/2 jalapeno pepper, chopped 2 (28-ounce) cans whole tomatoes, hand crushed 1 cinnamon stick 1 teaspoon sugar 2 tablespoons masa harina 1/2 tablet Mexican chocolate (about 1 1/2 ounces) Grated queso fresco, for garnish Cilantro leaves, for garnish Lime wedges, for garnish Directions In a small dry skillet over low heat add the ancho peppers, oregano, paprika, coriander, cumin, and chili powder. Cook until they begin to smell, about 2 minutes. Put the spices into a spice mill or food processor and grind until they are powdered. Set aside.
Heat a large heavy bottomed casserole over medium heat; add 3 tablespoons olive oil and the onions. Cook until the onions are soft and beginning to caramelize, about 10 minutes. Pat the beef dry and season it with salt and pepper. Add it to the pot and cook, stirring frequently, until it has browned on all sides, about 10 minutes. Add 2 tablespoons of the toasted spice mix, the garlic, chipotle, jalapeno, tomatoes, cinnamon stick, and sugar. Season with salt and stir well. Add some hot water until the meat is just covered with liquid. Return to the boil, reduce to a simmer, cover, and cook for 1 1/2 hours. Remove the meat and shred it with a fork. Return it to the pot, stir in the masa harina and chocolate, and cook for another 10 minutes, uncovered, to thicken. Taste and adjust seasoning. Serve with the queso fresco, cilantro, and lime for garnish.

I use a crock pot (slow cooker) when making chili, but I'm sure you can get the same results when simmering on the cooker.
I chop up an onion and fry til translucent in a pan.. then add the beef and cook until browned. Sometimes I add some green pepper as well.
I toss that into the slow cooker then dump in a can of chili beans in chili sauce, two cans of chopped tomatoes, some mild chili powder, crushed chilis, worcestershire sauce, an oxo cube (beef stock), some garlic granules or fresh garlic, a teaspoon of sugar to counteract the bitterness in the tomatoes.. and I think that's it. I just let it sit and cook all day.

You'll also need onions, peppers, tomatoes and garlic, and don't forget yer spices: chili powder, oregano, black pepper and a pinch of cinnamon. My wife makes a killer chili con veggie (veggie sausage and/or other meat substitutes) And yea, crock pot for the win.. . . .

I usually brown my beef with the onion, then add the rest of the fresh veggies (I like to add a variety of fresh hot peppers, bell peppers, sometimes some corn). When all the veggies are softened, add an equal amount of tomatoes and beans (I also like to use a variety of beans: Pinto, Kidney, Black, Garbanzo). Then add your garlic and spices (lots of chili powder is key), and simmer for at least an hour. A slow cooker makes things easy since you don't have to watch it or worry about stirring, but it will be ready faster if you do it in a big pot on the stove.

Yep, i use half the amount of chili powder for cumin. It really does make the "chili" flavor.
Using Rotel instead of just tomatoes is a nice touch sometimes. Or maybe like a black bean/white corn salsa, that is a good flavor. I make "chili" a few different ways, different flavors.

other veggies not mentioned that go great in a chili con carne (especially if it's a vegetarian chili), are celery, carrots and corn.

All right my chilli turned out to be da bomb!
Though I barely know any recipes my cooking is the shit. I just have a natural gift of making yummi stuff
I put the minced meat in a pot. Added a wee bit of water and went out to buy some garlic and onions. Damn I picked the shittiest garlic bulbs ever A single clove was ridiculously small.
Anyway I chopped half an onion and a bunch of garlic, tossed it in and then added some medium strenght chilli sauce in the pot. Afterwards the beans.
And man was it good. Also at the end of the end of the cooking process I added some grated cheddar

The chili powder I use has cumin in it, that's why I don't tend to add extra.
