substrate tea question

my friend's got a 3 or so jars that colonized half way or more and then stopped showing signs of growth for about 3 weeks while the rest of the batch was fine. can the colonized parts of the jars be cut out and used for tea?

I wouldn't bother. At least not untill you know why they stopped. Could be unseen contamination.
