i have about a dozen good sized jalapenos i picked the other day and was wondering if anyone on here had a recipe for a jalapeno sauce.

I would coat those jalapenos with some oil and lightly roast them on the grill. Salt and dice or blend. Mix with some vinegar, garlic, onion and sugar to taste. Nice and easy, and delicious!

I just used this one and it turned out pretty good. I halved the amount off vinegar and also used Rice vinegar. I used a steel pot also. Personally I think this is a good base to start with and then play around with.
1 teaspoon vegetable oil 20 fresh jalapeno peppers, sliced 3 cloves garlic, minced 1/2 cup minced onion 3/4 teaspoon salt 2 cups water 1 cup distilled white vinegar
1. In a medium glass or enamel lined sauce pan over high heat, combine oil, peppers, garlic, onion and salt; saute for 4 minutes. Add the water and cook for 20 minutes, stirring often. Remove from heat and allow mixture to cool to room temperature. 2. Transfer the mixture to a food processor and puree until smooth. With the processor running, slowly add the vinegar. 3. Pour into a sterilized jar with a tight lid. This sauce will keep for 6 months when stored in the refrigerator.

Fuck that! Chop that shit up, and make some homemade salsa. It's bloody delicious you know!
In a saucepan add:
hot peppers chopped onions tomatoes diced celery seeds a little sugar a little salt oregano parsly
Heat up, let cool, serve on torias. Better than store bought.

I was chopping some jalapenos the other day when I needed to take a leak. I forgot to wash my hands before. It wasn't totally unpleasant. Noticeable but not unpleasant. This is not at all meant to be confused with a certain Admin's decision to purposely put hot peppers in his asshole.

the ones i'm growing in my yard are fucking HOT! I can't even add a half of one to a quart of salsa without making it TOO hot. No, i'm not a puss either. Anyone ever had a blazing hot, habanero-like jalapeno?

Ive had some hot jalapenos. the drier and hotter it is outside the hotter they will get.
Liquid is right about the seeds and stuff. pussy shit mang. When i use jalapenos in salsas i like to roast them first in a dry pan or over a burner. Then use a mocajete to grind it up.

thats how mine were, i put two small ones in a pot of chili and it was hotter than hell

My favorite think to do with my jalapenos is to infuse tequila for some jalapeno margaritas. For those of you who haven't had one, its a must. Super chilly temp of the marg with the heat of the jalapeno is an great contrast. All you have to do is get some medium grade tequila and pour into a jar, cut your peppers into quarters or so (remove some veins and seeds if you want to cut the heat down, I usually don't I can always add more tequila if too hot to dilute) and let them soak for a day or so. Then remove the peppers and uses in your favorite margarita recipe. I usually just prefer fresh squeezed lime juice and triple sec, but to each their own. If you give it a go let me know how you like it.
