First off, you need to find a good base noodle and seasoning. I tend to go for Nong Shim brand Spicy Ramyun or if I'm feeling like something a little more delicate, their Hoo Roo Rook mild ramen.

These are the additions I typically draw from (pretty much listed in order of addition):- Onion (brown, purple, sweet or white)
- Mushroom (Shittake, Oyster, Brown Beech / Buna-Shimeiji, Enoki or even buttons)
- Dumpling or thin slice meat (steak or pork)
- Egg (poached soft!)
- Chili Oil (if the ramen base isn't hot to begin with)
- Chinese Cabbage and/or Bok Choi
- Raw Peeled Shrimp (dunked into pot just before flame is turned off to cook in residual heat)
- Chives, Green Onion, Avocado and/or Cilantro to top after plating

Some people like to egg flower their egg by stiring it into the soup and essentially incorporating it into the broth to increase the overall body of the soup base. That's cool too, but I just love poking into that poached egg with my chopsticks to see the yolk oozing out over some of my noodles. If you think you'd like that too, I would suggest adding your egg only 15 seconds before putting your noodles in the pot. Then cook the noodles only 1.25 minutes before plating.
The residual heat in the bowl after being plated should bring the egg to a perfectly soft poach while the noodles will not become mushy as you wait for the soup to cool enough to be able to eat comfortably. You can also use this cooling time to chop up your green onion, cilantro, or avocado to garnish the top of your presentation.
This is the way I almost always make my ramen...

I like the Nong Shim spicy ramen as well. I don't usually add much stuff to it, but I like to throw in some extra protein. Frozen seafood medley mix(shrimp, clams, calamari, mussels), chicken, or shrimp. If I don't have any of that, I'll slow poach an egg. I generally add dried seaweed every time I make it. I like the flavor it adds.

Likewise my friend, though typically only if its over ripe for my taste: My Homemade Kimchi
I rather eat the kimchi on the side so it can be used as cooling crunch refresher in between slurps of the hot soup. I typically use unseasoned Chinese/Napa cabbage for cooking into the soup, since the base of the nong shim is plenty spicy as it is!

3 tablespoons peanut butter 5 tablespoons hot water 2 teaspoons lemon juice 2 tablespoons soy sauce 1 teaspoon chili-garlic sauce
Combine the peanut butter, water, lemon juice, soy sauce, nd chili-garlic sauce in a medium-sized bowl and stir until ombined. (Add more water if you want a thinner consistency.) Nuke for 30 seconds. Serve over steamed veggies and fried or eamed tofu, or use as a dipping sauce for veggies and tofu. Makes 2 servings.

Absolutely agreed! Chili Garlic Sauce is - to my taste - head and shoulders above Sriracha paste. Though I will concede that the Cock Sauce paste with the neon green squirt cap is convenient when I'm at the local soup house, and I'll be happy to eat it up if there's no rough texture chili garlic around. Gotta get my heat one way or another, you know what I'm sayin'? At home however, you will not find my fridge lacking one of these (typically the larger size).

My lazy stoner ass from 6 years ago came up with this recipe.
1 pkg Oriental Chicken Flavor Ramen 1 pkg Cajun Chicken Flavor Ramen a pinch of pepper a pinch of chili powder 1 tbsp of Worcestershire sauce
Has a nice little bite but not overwhelming. My friends love it.
My ol lady frys it up in a pan, which isn't too bad either. Sometime adds egg.

Spicy or black Nongshim ramen Boiled egg Enoki mushrooms Green onions Add the last three ingredients once the ramen is finished cooking. And use Asian market ramen. Not that top ramen bullshit. BTW this costs me $1.87 to make
