I've been doing extract for years but finally have an all grain setup, I sampled some of my first all grain batch last night, a jalapeno pale ale, it was supposed to be a hoppy barley wine, but I missed my gravity something fierce, I just decided to roll with it instead of adding extract to make up the difference, it tastes.... interesting, not bad, just interesting. I also got some ipa fermenting, and a belgian ipa.

im not brewing ATM, as i will be moving in a few weeks. but my best friend always has some crazy new brew hes trying out. hes tried beer with coffee in it, not bad. beer with yohimbe and a few other stimulants in it..... now THAT was some interesting beer. we drank about 3 12 oz bottles of it one night and we were up yapping away until 6am, we got drunk, but it was a very different drunk. i liked it.

well i'm not brewing i'm fermenting... i got some welchs grape juice wine going ( a experiment) i just bottled 3 gallons of last years fig wine.. i'll probley be picking some figs tomorrow for another batch.. i've got a peach banana wine 3 days into fermenting right now.. soon to put into a carboy... i'm wanting to get into beer.. but i got to many hobbies already i think.. but i love some flavorful beers.....cheers

I just bottled a lager I brewed as a wedding present last week and I've currently have a red ale fermenting. I'm planning to start an imperial stout after I transfer my red to a secondary fermenter so I'll have a nice strong and roasty beer with a few months of age to warm me up when the colder months come 'round. I also do a lot of experiments with gruit ales which can produce a very nice and unique intoxication though as far as taste are very different from beer as we know it. I'm not currently brewing one of these but I've got a friend with one fermenting right now and he's got some herbs for gruit brewing for me so the next time I see him we'll definitly start a brew with said herbs.

I have a couple batches I made! Mead is so good...I really don't know why more people don't drink it!

It's delicious and easy to ferment! But it does require patience, I'm planning on aging my cocoa mead for two years as an experiment >_<

To OP ~ I just bottled a batch of German Altbier from Northern Brewers yesterday!!! So RANDUM!
Gotta love the easy extract kits! I have a batch of Bavarian Heffeweizen in my secondary, and just this morning brewed up a batch of IPA . Also have a carboy of Oktoberfest sitting in the corner of my kitchen just waiting for harvest day!
German Alt and Heffeweizen are probably my two favorite beers.

Mead is so good! I've yet to attempt a batch of my own though, maybe I'll give it a go after I get a couple other brews I'm planning out of the way

just finished a batch of moonshine. Im about to start a stout, which i heard is a good starter beer. This is my first stab at brewing beer, more of a distiller.

Well good luck with it man, I've always been curios about Distillation and a couple friends dabble in it. With kids I'm lucky If I get to grow my garden and brew my beer.
Good luck with your first batch man! A Stout huh? Nice ~

Gonna get a batch (5 gal) of hard cider going really soon, might even distill some of it into brandy for new years. We'll see...

I usually use a bread yeast, which needs a long time to age the bubble guts out;). I'm gonna give a champagne yeast a try this time, probably lavin.

Champagne yeast will ferment it out extremely dry. The only time I will use Champagne yeast with apple juice is if I want to run it throught the still and make apple brandy. Bread yeast works just fine, and I've had decent results with ale and lager yeast as well.

Yeah, that's what I'm going for this time around. I'm also adding quite a bit of brown sugar, so hopefully some of the sweet stays with it. In any case, I deffinitely plan on making some brandy with it

there will not be any residual sweetness left from brown sugar, unless you kill the fermentation with those tablets(which i refuse to use), youll need a non-fermentable sugar to have sweetness at the end.

KK, thanks! Yeah, I may do a small batch with the lavin to see if the lady and I like the taste, but it's deffinitely gonna be made into brandy either way
