Bubbling/Smell after Dunk

Just curious....... A 1/2 pint brf cake was dunked for 8 hours after the first flush. When the jar was opened it released a lot of bubbles from the cake. The lid had to be opened slow to avaiod the pressure from spitting water out.

Also there was an unfimiliar smell in the jar. Not mushroom smelling anymore. Hard to discribe. So it was tossed out. Before it was trashed, the cake was crumbled apart to inspect the inside. It looked fine. No odd colors or textures.....But the water in the jar was a bit orangish in color after the dunk.


My question is about the release of air...and smell. Is this a contam that crates a gas release? I want to avoid this in the future.

I searched and did not find any info on the bubbling jar issue?

That's hard to tell but normally strange smell or odd colors mean no good.
Did you use only water to dunk the cake ?

I dunked the cake in a clean pint jar with bottled water. I did not put the jar in the fridge. I let it sit in my clean supply closet.......

The bubbles blew my mind. Strange..........

Ive seen dunking water become kinda bubbly when im taking the cakes out. They looked at smelled normal and fruited with out a hich.

I am positive that the water was not carbonated.

Another jar did the same thing last night. There was not a bad smell this time, but a mad release of bubbles when I took off the lid.

BTW - The bubbles came out of the cake? The water was not bubbling as carbonation would. It rushed out of the cake. I was thinking that the cake(s) may have had pockets of air in them that released when the lit was released....maybe the cake was real dry and the soaked water forced the air out? I did notice that there was a lot of water absorbed into the cake, lowering the level in the jar.

I got the water from one of those vending machines that refill plastic jugs...maybe bad water? I usually buy sealed containers of water. I will stick with that in the future.

I will wait and see if I run into contams on this cake. It smells fine.....

That's kinda like this one cake I had going... it looked like there was a wet spot, and I opened the lid of the jar to get a better look at it, and when I unscrewed the lid, BAM! A whole pile of built up pressure from inside came out from under the lid... wonder what it was?

A byproduct of fermentation can be CO2. Fermentation usually occurs in the absence of O2 and can be caused by bacteria.
