I was consideringe adding some carbohydrates to my substrate jars hoping they would colonize quicker.
what should I use? Sugar? glucose? fructose? dextrose? how much?
Thanks

true, sugar does increase contam risk, but no more than the sugars present already in any substrate. AFOAF has had good luck with replacing water added to cakes with a 3% by weight maltodextrin (clarified rice syrup solids available from http://www.californianatural.com ) and water. AFOAF had no comtam problem due to proper pastureization proceedure and incoulation proceedures. The main growth factors found by AFOAF's research are Glucose, Maltose and Thiamine Hydrochloride, and have very good results using these. Dextrose is Anhydrous Glucose BTW. My F'sF humble opinion is that Maltose is the best sugar to use when brothing.

I tried this by adding 5% karo syrup to my water while soaking rye, very slow growth of mycellium, also i tested the ph of the water after it soaked and it was extremely acidic (4.50) WOULD NOT RECOMEND no contamination, but growth was extrtemely slow compared to water alone. also tried g2g transfer on some 5% KARO after an initial failure with a spore syringe with some succesful established grain cultures. the results were still very slow growth of mycellium so i started over with water soaked grain and my jars ended up fully colonized in about ten days.... stick with water that has a ph around 7

You don't want to add extra sugar to grain jars. More sugar is not good, it has been theorized that after a certain point to much sugar actually can cause the mycelium to slow down or stall out. Some people like to say the excess sugar puts the mycelium into a sugar coma. Kinda like someone in ketoacidosis because there body can't use the excess sugar it is in taking.
That is why most people suggest to only use 3-4% sugar by volume in an LC, cause to much of a good thing can be a bad thing.
