Bread it with heavy lemon in light oil and serve with grilled asparagus and maybe wallnuts. Yeah it's a little subpar, but for the cheap it's not bad at all.

and there is a big difference between salmon, and good salmon.
I will take a fresh cut of sockeye salmon over a good cut of steak any day.

I am a seafood aficionado as well.
Tilapia are a cichlid. The ones you get in the food market are probably all closely related. Tilapia are flaky and delicious. Some one mentioned they are salt water fish. I've never heard of a salt water farm raised tilapia. They are good for aquaponics and easy to raise. They can also be raised with catfish, carp, and some other fish. They do grow extremely fast in tropical or warmer areas and even indoors or in greenhouses.
The reasons you had a bad tilapia experience could be broken down below.
Was the tilapia cooked with the gills still attached? This will ruin the taste. Some East Asian restauraunts have served it like this and ruined the taste of the fish. It is disgusting and ends up tasting like rotting blood.
Was the tilapia spoiled .. Again gross... Even after it would be cooked.
Was it not flaky and tender. Overcooked, undercooked, or cooked long ago.
As for the possibility of it not being raised properly. I would not suspect this as if the fish is cleaned, stored, and cooked properly it would be hard to tell but not impossible. This is still a huge concern and a reason I do not eat Chinese Farmed Aquaculture or buy it. (Sorry but True) I've seen the ponds and the amount of pesticide and herbicide in the water used in these trenches. There is no concern for human life just economic return in China when talking about business.
Tilapia eat what you give them and they are not bottom eaters, they would prefer to eat insects and small aquatic prey in natural circumstances but adapt well to pellet feed as other cichlids do.
Anyway... That is where I'm at on the issue.

there are brackish water tilapia and not all tilapia is farm raised, as I've always said, the farm raised fish tend to taste like dogfood

Its the biggest selling item on the menu at the shitty restaurant I work at. We do maybe 150 orders of that shit a day its nuts. Mostly its pan fried in a huge cast iron skillet. You also season and marinate the shit out of it. Its a mix of African ,Cajun, east Indian ... So its all over the place I haven't tired it yet.
We serve mostly seafood and poultry (No pork or beef) . Its apparently a religion thing .

Tilapia is like manna from heaven compared to Swai, which is some kind of Vietnamese catfish. I got a big bag of it at walmart a while back for next to nothing, and I still felt gypped. I ate one piece, and threw it all out.
It has the texture of scrambled eggs, and no flavor at all.
