Questions about reusing bulk sub

If a small tray of poo fully colonized and then cased with 50/30/20 coir/peat/verm were to have a bad pinset do to high acidity in the casing layer, would it be possible to re case the sub?
or, would it be possible to respawn the substrate into more poo trays and start over?
thanks

Don't quote me as the 100% truth, but no, I'm not sure that will work, either way. You MIGHT be able to use poo to respawn in another tray, I know that Agaricus Bisporus will tolerate that (which is how the species was cultivated for many years).
The problem I see, and feel free to correct me if I'm wrong, anyone, is your mycelium has already gone from vegetative growth to producing fruit bodies. While a few other species have absolutely no problem switching back and forth between the two (mostly wood-loving mushrooms, which fruit seasonally,) I'm pretty sure once cubes go to fruit, they consume the substrate, grow shrooms, drop spores, and then begin to die back, all in the same little window of time. You might get a couple of flushes out of them, but eventually they're going to die off. Not only that, but remember that cubes are a secondary decomposer (saprophyte), which means they grow on substrates that have already reached a certain level of decomposition (in this case, usually herbivore poo). It's a lot easier to break down poo than it is wood, so the substrate is consumed quicker.
Hopefully that wasn't tl;dr, and hopefully I've hit upon a note of truth. I've been reading a lotta Stamets lately, lol.

Wash off the failed casing layer, see if it fruits like that. Less you mess with it, better off you'll be.
But...

What makes you say this?

coir verm casing later tested at over 7 almost 8 on the ph. i assume that is mad acidic but as a nuuui could be wrong or it could be other factors. pf cakes after 3 good flushes recolonized poo really happily. I thought perhaps the sub will take another go at the casing or at least be broken up into more poo and re spawned?

You spawned cakes that already gave three flushes? That's part of the trouble right there. So what's a 'bad pinset'? Got pics?

According to The Mushroom Cultivator, cubensis likes a pH of 6.8-7. I'm not sure how much more acidic almost 8 is, but I would just clone fruits and start a new tub if you're that worried. I don't think you can go switching casings and all that with cubensis...I'm not sure you can with any species.

no the cakes colonized a nice tray of poo, the said casing with bad pinset is from new spawn.

um pH 8 is basic. The lower the number the more acidic it is. The higher the number the more alkaline it is. Pure water is at about 7 pH which is close to neutral. So about 7-8 is slightly alkaline.

coir is nutritous and not a good casing material, i would assume a bad pinset is do to the myc trying to colonize the coir while in fruiting conditions. but i might be wrong.
