HELP! Can't get any growth in the fruiting stage.

Hello all! First time growing here and am having some issues...
I read all of the FAQs and such that I could and couldn't find anything to help me troubleshoot my problem.
I am doing a PF Tek setup and made it through everything up to the point of putting my cakes in my terrarium. It's been about 2 weeks and so far nothing at all is happening. No pinheads or nothing. The temperature has been a solid 75-80 degrees and the humidity varies a little more, but always between 85-95% according to my digital gauge.
There's also some bruising that has been showing up on a couple of the cakes. I took a cotton swab to it to make sure that its not contamination and I'm pretty sure it's just bruising.
Does anyone have any advice?
BTW - I'm using a styrofoam cooler with steel mesh in the bottom to keep the cakes off the bottom of the styrofoam. I'm using a air stone/air pump/fish tank heater type of setup.

You don't mention whether or not you're fanning and misting. And what's this airstone setup? Is that like the old PMP's? Can't say I'm familiar with it.
Best choice for a first time grow, IMHO, is a shotgun chamber. Hell, I still use 'em, and I'm about to build my third one.

I was under the impression that if you are keeping the humidity high enough without misting that it was not necessary. Is that incorrect?
Also, not fanning, but I open the cooler a couple of times per day to replace the oxygen in there.
What should I be doing differently?
EDIT: The air stone is connected to the fish tank air pump and put in a bottle of water to create air bubbles (which increases humidity).

Is misting and fanning something I could start doing now, or do you think the cakes are ruined now?

Plus,the bruising sounds like they're drying out too-you did dunk 'n' roll them,right? Does the verm look dry and are the cakes particularly light to lift..?
Edit:you can start doing it now (and should) but you need to figure out if your cakes are dehydrated first.If there's no pins and they are dry,I may redunk 'em,then reintroduce then to fruiting conditions.

I'm not sure what the official line is on misting. You probably don't have to keep them moist like I do, but I feel like the myc needs all the moisture it can get.
Even at 100% humidity, without any moisture evaporating from your cakes, your myc is still going to consume water in growth and fruitbody development. I think something like 70% of the weight of the mushroom is water, and that water has to come from somewhere. It might as well be somewhere close. I don't know if they could soak the moisture out of the air, but I'm sure it'd be more work that sucking it out of the substrate if they can.
Another reason I see moisture being a problem is your bruising, which typically happens when PF cakes start drying out, especially since you've got 360 degree airflow around them with that wire mesh.
I would start misting, and since you still haven't seen pins, start fanning too, as fresh air is a vital pinning trigger.
Since your cakes have been sitting out so long, I'd give 'em a dunk as well, let 'em soak for 12 hours or so and toss 'em back in.
Are you using perlite? That will also help keep your humidity up. Trust me, next time make a SGFC. It will save you so much trouble and they about $20 so as long as you keep fanning and misting twice per day (once when ya go to work, once when ya get home, and I do an extra time before bed) you're guaranteed to have some kind of flush. Even a small one.

misting and fanning are pretty important...I've let a few go without it and their performance suffered because of it. If they are dried out a little dunk and roll again and fan and mist...That's what I'd do anyway

I did not dunk and roll. The step-by-step walkthrough that I had didn't mention dunk and roll. I found this site after I had already started the process. The vermiculite does look dry. How can I save them?

How can you have verm on then if you never dunk & rolled 'em? 
nevertheless,run then under a tap to wash them,submerge in cold water for 24 hours,take them out,roll them immediately in verm,back in the fc then fan and mist regularly.
I think you may be good.Myc can be quite tough. 
edit:Oh yeah,always dunk & roll cakes too.
