How long can I keep colonized jars?

hi everybody,

its been a while since ive been at it but I just started my biggest project yet.
I inoculated 6qt jars with (believe it or not) 3 years old spore syringe and it worked like a charm. the mycelium is pretty rhyzomorphic, too. But anyway, now I am just wondering something...
I am having trouble finding poo or coir (should have it in the next couple of days) and now my jars have been colonized for a couple of days already..

the myc started expanding on top of the grain and I was wondering what I should do. should I leave it as is until I find the coir or shake it to prevent that myc overlay? will It be fine even if it stays like that two or three more days?

I took pictures with my phone but apparentlt I cant upload them here thru it.

General though on it is that grain should take about 2 weeks to colonise and they are still good for another 2 weeks after full colonisation.

You can seal them in a ziplock and put them in a fridge to stop the clock if it must be done.
