Wet spot? Or over condesnation
    #1297819 - 02/10/03 06:29 PM (21 years, 1 month ago)

I have 12 jars of Rye Grains in Quart Jars.

They were all growing very healthily, then today I noticed that they were nearing completiong 85-95% and began to shrink.

The mycellium which was fluffy now was more matted down and the rye was turning into a darker color.

There was always water condensation, but I'm afraid it may be wet spot/bacillus.

When i shook the jar up, the water was somewhat beigeish, sort of like the color of these forums.

But it wasnt really greasy. Theres only a little part of the rye that needs to be colonized.

What should i do? Is it wet spot?

That description could indicate bacterial contamination. Shaking is a bad idea right now, i tried once draining it and it worked well. Bacteria is an anaerobic microorganism, it doesn't like air but figthing it may be difficult anyway.
You could also birth that jar and cut the infected area but the chances of further infection are also incresed.
Do you notice any strange smell ?

I opened three jars up of similar qualities.

Took a whiff of the first one, smelled like nothing.

Took a whiff of the second one, very strong odor.

Took a whiff of the third one, very strong odor once again...

However, these odors were shroomerific! I poured out the water, which probably filled only 1 tsp max, and it was a dullish beige color. I tried sniffing that but it smelled like nothing.

The rye cakes were somewhat rubbery where there was liquid contact, but i broke them up and cased them anyway. It only smelled like mushrooms, so I think that the excess water may have been just the condensation that dripped down or mycellium waste products or even rye grain juices.

Myc has a bi-product that is a yellowish clear color. Thats what my idea would be that this is. Its just mushroom PISS. Pictures would help.

I've had this problem as well, the fully colonized grain looked kinda wet, after opening the jars there was no odor though (exept for the shroomsmell) so i went on and cased them, they are doing fine now.

Good luck!

That's ok.
You probably added a little bit more of water when making the jars, you just have to get used to grain.
