get your RH as close to 100% as you can. also introducing fresh air multiple times day is the best way to trigger pinning. good luck

Weird thought but is your FC on the ground level or elevated like on a shelf or dresser. if there is no proper air flow besides fanning? Just a thought. It very well may just be taking awhile. no experience with z strain.

with how slow the others are moving. might possibly still be colonizing the inside of the cake. Just wait it out. re read your post and everything looks good in the set up.

once i had two jars going, one BRF and one Brown Rice Bran, the rice bran takes substantially longer to colonize, but seems to yiled better. The BRF i use is ground up long grain brown rice, some pulverized, some coarsly chopped, some in between. I think the consistency of the substrate plays a large part in this.

I have three varieties in jars now. Two were started a couple weeks or so ahead of the third. The first two couldnt have been more different in the way they grew. One strain, PE, took off like a beast, eatin' the hell out of some brf. The other strain, PF Classic, was creeping along. So slow infact I thought at first that maybe I had dud spores, but it finally showed a little something. The PE continued to bust ass and now those jars are almost done, but theyve been at this point for at least a week. Meanwhile, some time in the last week or so the PF Classic has took off and caught up with the PE. In the third set of jars I have Puerto Rican and they have almost caught up to both of the others!
I did make an observation, though. Maybe important maybe not but I noticed you went with 5 jars instead of 10 like I did (I actually went with 4 but it wasn't 10 is my point), I don't know about you but I have a lot of condensation in my jars, prolly because I switched up the number of jars and all that water in the syringe had to go in 4 instead of 10 jars. I'm sure this has some effect on theyre growth but luckily so far I've had nothing but brilliantly white mycelium. Next time I do this I will not put as much water in my brf mix, that is if I do brf again which I may not. But fewer jars is definitely the way to go in my newbie opinion. You get faster colonization and get an edge over contams by having that majority. I brew beer also and you're not going to ever get sterile conditions at home, ever. You do the best you can and then you out number and over whelm the unwanted bugs with the ones you want.
I just wanted to share that about adjusting the water in the brf mix when you use less jars because it may be important.

entirely true. i just made my first two batches of jars, and the only verm around here is super duper fine. needless to say, once my jars hit 100% and i gave them 7 days of extra consolidation, i noticed a huge slowdown. once in the FC, they were still in mycelium expansion mode for NINE days until they could finally start to pin and fruit. substrate airation plays a huge factor in colonization speeds. if you are making BRF cakes, definitely don't use the FINE grade (small bits) verm for substrate! lesson learned.
