Who's brewing something?

I'm 7 days into fermentation on my first batch of beer ever, it smells amaaaazing . It came from an ingredient kit (I feel like a teenager who just ordered a mushroom growing kit, so noobish) for German Altbier, but regardless of how it turns out I'm so excited to try it.
I've been reading through 'Joy of Homebrewing' by Papazian and just finished looking through the mead section... and I think that god juice is next on my list.
What've you guys got going? Any random ideas? I've been imagining some oyster mushroom beer lately

I have a mead on the go right now! Actually, it's done fermenting (took almost 6 months!!) and just clearing out right now. I made it from some honey a friend gave to me, straight out of his bee hives!
Which reminds me...I still have another 1gal batch of the stuff to make. Oh well, thank god for long weekends!!!

We've got two beers going:
Raining Blood Hibiscus Cream Ale, which is a strong cream ale with hibiscus flowers, it's lagering at the moment.
and another brown ale, which hasn't been named yet. We used re-roasted coffee in the secondary in the hopes of giving it a little coffee edge.
We've got a 5gal batch of mead going, with honey from Warmer Colors apiary in western MA. Total honey: 21lbs. It's been going since last summer, and probably won't be ready to drink for another year.

I just bottled a 5 gallon batch of mead! its so , I added some cloves and cinnamon this time, which added a little something compared to my last batch. can't wait to make more...

I reuse my old beer bottles. Lots of 12 ouncers and 24 ouncers laying around. LOTS. Lol.
If you are going to spend money on bottles, the 1 liter EZ Cap are the way to go. No caps to buy, less bottles to fill, bottles are heavy and don't try to tip over as you fill. Here's the cheapest I could find but if you ship bottles you will be sad they are very heavy. Try to find them locally would be better.

We're resurrecting our all-grain setup for a pilsener, actually. The key this time is an inline filter between lauter and mash tuns. We've gotten some REAL frustration in the past with grain husk fragments gumming the fuck out of our sparge arm.
No more. We're thinking we'll just use a fuel filter or something.

Whoa cowboy. You ain't gonna be usin' no fuel filter.
Here, allow me to help.
First, Throw Away that Gott toxic plastic cooler with the false bottom going to your lauter tun with the sparge arm. Toss that shit.
What you do is you mash in your brew kettle and either insulate it or hopefully it fits in your big cooler that you ain't using no more for mashing. Why drink plastic leachings anyway right? You don't want no BPA gettin' in ur belly anyhow.
Then, you makes yourself a filter that works and you can work with. Here's what you do. Take one of them 16" or so plumbing stainless steel flex connector. Cut off both ends with a hacksaw. Peel off that stainless steel mesh outside part and crimp off one end. Take the other end and shove it over some of that reinforced plastic tubing the kind you find on those spray things on top of the sink work great. Just cut the spray thing off the end you don't need that. You can clamp the flex on with a stainless clamp the kind you find in your car but get stainless this is your beer not your car.
When you finish mashing in your nice stainless container, you shove that stainless flex part down to the bottom of your mash tun( I loop mine in a circular loose "knot" to make it easier to shove to the bottom. Then siphon your tube and start collecting your runnings.
It's that easy, it works great, if it does get stuck (very rare unless using lots of rye for instance) just pull it out rinse it off and shove it in again and proceed, sir.
I have a Proctor Silex stainless stock pot that fits nicely into my IceCube cooler. I can even put the lid onto the stock pot while inside the cooler and shut the lid on the cooler. Nice. No plastic leaching it's toxins while mashing.
Keep it simple and for gods sake man no Fuel Filters. Trust me that Stainless mesh is a Wonderful Filter. Wonderful.

the outer area of those toilet/dishwasher connects are possibly the best non-pro mash filters I know of. Probably better than the screens I am using right now, but I can't convert my mash to use one unfortunately.

I've been doing extract for years but finally have an all grain setup, I sampled some of my first all grain batch last night, a jalapeno pale ale, it was supposed to be a hoppy barley wine, but I missed my gravity something fierce, I just decided to roll with it instead of adding extract to make up the difference, it tastes.... interesting, not bad, just interesting. I also got some ipa fermenting, and a belgian ipa.

im not brewing ATM, as i will be moving in a few weeks. but my best friend always has some crazy new brew hes trying out. hes tried beer with coffee in it, not bad. beer with yohimbe and a few other stimulants in it..... now THAT was some interesting beer. we drank about 3 12 oz bottles of it one night and we were up yapping away until 6am, we got drunk, but it was a very different drunk. i liked it.

well i'm not brewing i'm fermenting... i got some welchs grape juice wine going ( a experiment) i just bottled 3 gallons of last years fig wine.. i'll probley be picking some figs tomorrow for another batch.. i've got a peach banana wine 3 days into fermenting right now.. soon to put into a carboy... i'm wanting to get into beer.. but i got to many hobbies already i think.. but i love some flavorful beers.....cheers

I just bottled a lager I brewed as a wedding present last week and I've currently have a red ale fermenting. I'm planning to start an imperial stout after I transfer my red to a secondary fermenter so I'll have a nice strong and roasty beer with a few months of age to warm me up when the colder months come 'round. I also do a lot of experiments with gruit ales which can produce a very nice and unique intoxication though as far as taste are very different from beer as we know it. I'm not currently brewing one of these but I've got a friend with one fermenting right now and he's got some herbs for gruit brewing for me so the next time I see him we'll definitly start a brew with said herbs.

It's delicious and easy to ferment! But it does require patience, I'm planning on aging my cocoa mead for two years as an experiment >_<

To OP ~ I just bottled a batch of German Altbier from Northern Brewers yesterday!!! So RANDUM!
Gotta love the easy extract kits! I have a batch of Bavarian Heffeweizen in my secondary, and just this morning brewed up a batch of IPA . Also have a carboy of Oktoberfest sitting in the corner of my kitchen just waiting for harvest day!
German Alt and Heffeweizen are probably my two favorite beers.

just finished a batch of moonshine. Im about to start a stout, which i heard is a good starter beer. This is my first stab at brewing beer, more of a distiller.

Well good luck with it man, I've always been curios about Distillation and a couple friends dabble in it. With kids I'm lucky If I get to grow my garden and brew my beer.

I usually use a bread yeast, which needs a long time to age the bubble guts out;). I'm gonna give a champagne yeast a try this time, probably lavin.

Champagne yeast will ferment it out extremely dry. The only time I will use Champagne yeast with apple juice is if I want to run it throught the still and make apple brandy. Bread yeast works just fine, and I've had decent results with ale and lager yeast as well.

Yeah, that's what I'm going for this time around. I'm also adding quite a bit of brown sugar, so hopefully some of the sweet stays with it. In any case, I deffinitely plan on making some brandy with it

there will not be any residual sweetness left from brown sugar, unless you kill the fermentation with those tablets(which i refuse to use), youll need a non-fermentable sugar to have sweetness at the end.

KK, thanks! Yeah, I may do a small batch with the lavin to see if the lady and I like the taste, but it's deffinitely gonna be made into brandy either way
