I would wait at least 2 days after they are fully colonized before birthing. I don't think you need to worry about that condensation at this point. And it is possible that you will have some funguys for your birthday.

on especially wet batches I'll have condensation build up as the mycellium spreads. The condensation is bad because it makes an easier environment for contams. But its not deadly, and if the condensation hangs out where the mycel I believe you're safer.

No worries though, its not worth opening your jars exposing tons of contams just to dry it any.

Just take the tape off lid holes and flip'em over, this will help release co2 and moisture.

wait a good week till after full colonization
the top part next to the verm layer might not be colonized, i usally wait till the cakes start to pin before i through them in the chamber. You say you have them incubateing at 78, well crank it up to 88. They wil grow much better and once you through them into the chaber they will want to fruit because teh temp change.
