Any cheesemakers in the house?

I had a pretty great experience with my first cheese from culture.

As history:

  • Long time back started by making panir. Gallon of milk, acidify with vinegar, press curd. Cookable cheese, came out pretty good. Did not satisfy my craving for real cheese.
  • Made a 5gal batch of mozzarella from local raw milk. Used citric acid and liquid rennet (with lipase for flavor), drained, did the whole heat and stretch thing. The mozz was AWESOME. We failed to store it properly, though, our brine kinda dissolved it. So those of us who ate it right away were happy, but if not, it got melty.


This time I did a two gallon batch of pot cheese. I'm somewhat bewildered by the different names for all this cheese stuff. The recipe called it Neufchatel, and in American parlance that apparently means what I made, unaged pot cheese. Farmer cheese is apparently pressed more? Whatever.

Point being, I got a mesophilic culture from cheesemaking.com, bunch of dry rennet. I used this recipe. I could not have been happier with the results! It had consistency somewhere between cream cheese and ricotta, but with a stronger tangy cheese flavor than cream cheese. I mixed some with dill to eat with pretzels, I used some to make enchiladas, and I used the rest to make a italian cheese pie. I tend to improvise on the enchiladas all the time. This time did a sauce based on ground pasillas, with some other chilis, cinnamon, and some raisins.

Anyway, the next project is going to be farmhouse cheddar. Hope to make a big 4gal batch, as soon as we get some cheese wax.

EDIT: Oh, and I'll be taking pictures from now on.
