Mexican food

I was wondering if anyone here knew anything about mexican food. It is one of my favorite kinds of food but I know very little about cooking it. My major question is what is that white cheese that they put on everything at mexican restaurants. It is very rich and it melts nicely. I have tried Queso Blanco and it wasn't even close, I also tried Queso Quesadilla and that was close but too mild. Does anyone know a sharper version of mexican cheese and where I can get it. Also if anyone has any good recipes for slow cooked chicken, you know the kind they simmer until it pulls and put in enchiladas and burritos and what not, go ahead and give me the link or post 'em.

If anyone is ever in San Diego, there is a great place called 'Super Cocina' that ranks up with the best (non fancy restaurant) Mexican food Ive ever had. It's a small hole in the wall in a poor neighborhood, the only place youll find white people. They rotate their dishes daily and have random regional dishes you wont find at most other places. I had a great mole there the other day, in fact Im going right now.

Shit man, Mexican food ain't supposed to be fancy. If a mexican restaurant portrays itself as being upscale, i get immediately worried.
It's kind of funny cuz out here in New York, since most people equate good food to fine dining, the great majoristy of mexican restaurants are bastardized with price fixe menus and wine lists.
It's a damn disgrace i tell yah!

Ha last time I was in New York my friend and I went to some taquerias that the New York Times recommended. They were 'meh to good' but nothing I cant find by walking 4-5 blocks in any direction around here. Well one had really good salsa but I happen to be close to a taco place featured on bobby flay's throwdown, where they won in fish tacos. Turns out though that the place isnt really known for fish tacos, mostly for their variety of salsa and other tacos.
The NYT article was great too, they had 'local mexicans' talking about how people from LA always come to NY and make fun of the mexican food. And how the LA mexican food scene is uncultured and boring or some garbage. It was a pretty defensive article about nyc mexican food.
I would like to go to Chicago and try out whatever that cats name is that was on top chef masters mexican restaurant. The mole he made looked damn fine.

No one knows how to make that slow simmered chicken I was talking about? You know the kind they use as filling for tacos, burritos, and enchiladas that is almost shredded or pulled. I wanna go to mexico sometime, mainly for the food.

The Mexican food in NYC basically sucks, including Mesa Grill (sorry Bobby). The Cuban, Dominican, and even Spanish is great though.

I figured out how to make that really good chicken I was talking about though no one seems to care. You slow cook chicken breasts on the bone with skin for added flavor in chicken broth with added seasonings like paprika, chilli powder, onions, garlic, salsa, and I may add some chipotle in adobo. Then you pull the chicken, mmmmm delicious. Any more advice on cheeses?

Don't use breast meat, use legs and thighs. Breast meat taken past 160f typically ends up downright awful and dry, even when you are cooking in liquid.

The only than truly mexican in a mexican restaurant is the taco shell...Most of the food you buy today is basted on spanish cooking metheds....

Apparently everything in New York is better according to New Yorkers. But I have a hard time believing New York has the best food in the country, when almost nothing that is cooked and served is locally harvested.
I mean what, are chef's gonna be harvesting bushels of moss off the subway sidewalk cracks? Pluck some fresh watercrest off the Hudson River?

I don't really give a shit. I am honestly saying that I love the American style Mexican food but I would like to go to Mexico and try real authentic Mexican food.
