Sterility is always an issue.

sterility? no.. a clean environment? yes. your cakes and casings can get contaminated at any time, although i have never had a contamination during the fruiting cycle. as long as you fruit in a CLEAN environment, you should be fine.

my cakes fruit in sterilite (nice pun eh? sterility, sterilite..) containers and i fan them twice a day in my bedroom. needless to say, my room is far from sterile and yet i've never had any problems.

Through trial and error, I've found that the cleaner you are during the fruiting phase the more flushes you tend to get out of a cake/casing before it contaminates. I've also found that cakes are a little more forgiving, but not a lot more.

my advice: buy yourself a can of lysol and some alcohol-based hand sanitizer. Before opening your terrarium for any reason, spray some lysol up into the air (not ON your terrarium, but near), rub some sanitizer on your hands, and avoid breathing into the box.

A clean cake is a happy cake!

Lysol and H202 are your best friends during the fruiting cycle. As long as the mycelium has completely established itself and formed a solid network, I wouldn't worry too much.
