n00b question about 'casing layer'

i'm watching the 'lets grow mushrooms' video called 'casing layer preparation'. can someone explain to me what the casing layer is? in the video, i see him prepare the layer and then towards the end, he pours it over a tray of fully colonized substrate.
i guess my main question is when do you need a casing layer? when do you use a tray?
i've got 10 jars going right now using the brf tek, but i'm having trouble understanding the leap to the trays and casing layer.

A casing layer is not needed for cubensis but it can be used. The casing layer helps maintain the proper microclimate for developing mushrooms.
trays and casings are for grains and bulk substrates. Since you're using BRF cakes don't bother worrying about it unless you want to start a simultaneous grow with grains and bulk. Just follow the PF Tek to the T.

Just fruit as cakes. I used casings for my first couple grows and they werre just mediocre. Its not worth it IMO.

The casing layer is a non-nutritive layer that pretty much creates a micro-climate for the colonized substrate to thrive in. It gives the Mycelium a "water reservoir". Casing your colonized substrate is useful in that it creates more surface area for the mushrooms to grow out of while providing moisture with the casing layer. However, with Cubes a casing layer isn't required.

I've never grown shitake but it's my understanding that it's a wood lover so grains might not work as a substrate. Grains would work to spawn it to wood.
Do a search for shitake and posts by rogerrabbit. He's got a lot of experience with shitake and would be better at explaining it than I am.
